Caramel Macadamia ANZAC Tarts! These tarts are a twist on an Australian/New Zealand classic biscuit. I have used @teamgoodness organic buckwheat flour to create my healthy version of an ANZAC biscuit, which acts as the base, and I have filled it with a nutritious caramel made of dates, almond butter and @teamgoodness organic coconut cream. If you do not have a blender to make the caramel, simply simmer a can of coconut cream and Β½ cup honey/maple on the stove until thickened and then stir through some sea salt and vanilla. Either version is absolutely delicious. To top it off, I have included caramel’s best friend, toasted macadamias! Buckwheat Quiche with Pumpkin, Spinach, Basil, Feta and Cherry Tomatoes πŸ™ŒπŸ½ I have been making this dish as a frittata for years and it is absolutely delicious! The addition of a crisp crust adds a wonderful texture and allows us who cannot eat gluten a chance to have pastry! Full of seasonal vegetables and protein from the eggs and almond meal, this dish is both wholesome and nourishing. Be sure to choose a vibrant orange pumpkin to ensure it is sweet and caramelised once roasted. This quiche is perfect for lunch and dinner or picnics and potlucks. If you are short on time you can omit the crust and simply make it as a frittata. Gluten free currant and orange zest hot cross buns 🐣 We made these on Saturday night and baked them fresh on Easter Sunday morning! They were absolutely scrumptious eaten fresh from the oven with a smearing of butter. I used my Carob Chai hot cross bun recipe and just replaced the carob with soaked currants and replaced the tea with just boiled water and orange zest. I also changed the glaze to orange juice and honey. So. Good. I'm even eating one now as we travel home after the long weekend away. This photo is just a quick snap taken on my iPhone. I promise I'll be back in the kitchen with my proper camera again soon. We've been away so much lately that I'm falling a little behind with my recipe updates and nice photos. Carrot and Ginger Crunch Bars πŸ₯•πŸ Raw, vegan and of course gluten, dairy and refined-sugar-free! A deliciously autumnal recipe, celebrating warming ingredients such as ginger and cinnamon and earthy hues of orange and brown. These bars are completely raw and plant-based, giving them an awesome texture with crunch from the caramelised buckinis and creaminess from the cashews in the icing. You can usually find buckinis and lucuma at health food stores. I found buckinis at @thesourcewollongong and lucuma at @flametreecoop. If you cannot find the buckinis you can use regular raw buckwheat groats or you could replace them with finely chopped walnuts or pecans. If you cannot find lucuma, simply replace it with more maple syrup or raw honey. You've got every reason to give these delicious, healthy bars a go! Vegan Beetroot, Kale, Cashew Cheese & Hazelnut Tarts! πŸ™ŒπŸ½ These completely #glutenfree #plantbased #vegan tarts are next level delicious!! The crust is made from lupin flour (similar to chickpea or lentil flour) for a nice protein boost and the 'egg and cheese' is replaced with a delicious cheesy cashew sauce that includes nutritional yeast. Carob Chai Hot Cross Buns! Gluten-free, dairy-free and refined-sugar free! I have used brown rice flour and coconut sugar to keep these buns low GI and as wholesome as possible. Apart from family coming together, Hot Cross Buns are my next favourite thing about Easter! I love all kinds, but the choc-chip variety are my favourite. Why just have chocolate on Easter when you can have chocolate and sweet bread together? In this case, I have used carob as I love its malty flavour and after using it alongside chai tea in my date and walnut loaf (see previous posts), I can’t stop using chai and carob together! You could easily swap the carob for dark chocolate in these buns as well. The carob/chocolate melts through the soft bun when heated, the chai tea adds subtle warmth and spice, and when smeared with some organic butter, these are just divine! Gluten free baking takes a little bit of science experimentation. I did lots of research about how to β€˜replicate’ or β€˜mimic’ the gluten in gluten free baking to create a similar texture to regular baking with wheat. You may need to visit your local health food store for a few of these ingredients that help to thicken and bind the dough. Totally worth it when it means not missing out on this Easter treat because you can't have gluten. Enjoy with a steaming hot cup of tea! Chai Tea Crepes with Salted Caramel Apples & Figs πŸ₯ž using the amazing @pranachai tea! When I first met my boyfriend he used to make me delicious crepes with caramel apples and cream. They were absolutely delicious and I totally forgot about them until something sparked my memory a couple of weeks ago and I was suddenly craving them again! However, I had to now find a way to make them gluten-free, refined-sugar free and with a dairy-free option, while still maintaining their scrumptiousness! I used the far more nutritious flours of buckwheat and brown rice, low GI coconut sugar, some yoghurt for a sourdough-like crepe and had to use the gorgeous figs that are in season! The eggs and natural yoghurt give these plenty of protein and you get a nice dose of seasonal fruit, making them a nutritious breakfast! Fresh Strawberry Panna Cottas with Chocolate Granola πŸ“πŸŒΈ Here is a little something to make for breakfast (or dessert) this Wednesday! πŸ’– The combination of fresh strawberries and thick coconut milk in these panna cottas creates the most flavoursome and delicately creamy treats you can imagine! The gelatin powder used to make them set is fantastic for gut health (you can use agar agar if you're vegan/vegetarian). Just like bone broth, gelatin is full of collagen, which is great for skin and preventing wrinkles and has been shown to improve gut health by repairing the intestinal wall, and sealing the gut lining. This is essential for healing leaky gut syndrome and the autoimmune conditions that stem from leaky gut, such as Graves Disease, which is what I have and have been told I will have forever. However, my most recent thyroid ultrasound showed no more signs of Graves Disease as all of my original β€˜nodules’ have disappeared. This is so exciting for me as I have done my research and have been avoiding gluten and processed foods/chemicals and it has definitely worked!! (More to come on this later). Pumpkin, Halloumi, Fig & Walnut Pesto Pizzas 🀀 Fig season has to be one of my favourites! However, I can safely say that I have never had as many figs on hand as what I do right now. So, yesterday, I decided to throw all of the things from my fridge onto a buckwheat base and call it breakfast. This amazingly sweet, salty, crunchy goodness was the result! This pizza is free of gluten and refined sugar and can easily be made dairy free/vegan by replacing the halloumi with a salty cashew cheese. For those who can eat dairy, this would also be delicious with goat’s cheese if you don’t have halloumi. Filled with fruits, vegetables and nuts, this meal changes our typical understanding of pizza as a junk food to something wholesome, nourishing and bursting with fresh flavour. Fig and Orange Blossom Bean Cake 🍊🌸 So, another recipe inspired by my trip to New Zealand! Auckland was absolute foodie heaven! We ate the best Vietnamese, Mexican and Sushi I’ve ever had and the most crazily creative ice creams you can imagine! However, it was when I entered a gorgeous book shop that I read about a cake made of beans. I have been making black bean brownies for years and years. However, an entire cake had me very excited. I came home to the markets being full of fresh figs and decided I’d give a fig bean cake a go. The results were amazing! This cake is seriously moist and the most perfect texture (like a white chocolate mud cake). The best part is that it’s mainly made up of beans, eggs and almonds, all highly nutritious and protein rich ingredients! Blueberry and Chia Mermaid Pops! πŸ’™πŸ¬ I recently returned from a trip to New Zealand where we did a 6 day hike through the wilderness on the South Island and visited family on the North Island. In Mount Maunganui I found a gorgeous little organic store, @beorganics.mountmauganui. Here I found β€˜Mermaid Latte’ powder created by a local Australian brand @nutraorganics. My mind immediately jumped to all of the beautiful, bright blue, summery goodness I could create with this superfood blend and I had to have it! Its colour comes from the matcha butterfly pea flower and blue spirulina and it also contains Ayurverdic chai spices, coconut milk and manuka honey for a delicious flavour! I have added chia seeds that turn part of the ice blocks to chia pudding, creating an extra thick and creamy texture as well as adding in some great plant protein and omega 3.
