Spiced Apple and Pear Baked Oatmeal 🙌🏽
Deliciously warming, this creamy baked oatmeal hits the spot on a cold winter’s morning. I recently visited Orange, NSW, which grows the most beautiful fresh fruit. The apples and pears straight from the orchard were so juicy and full of flavour. I basically made baked apples (a classic dessert that I love) and then poured the porridge mix around it to bake – so simple and so scrumptious. If you cannot eat regular oats or you cannot find gluten free ones, simply use brown rice flakes instead. In different seasons you could also try adding different fruits. Vegan GF Chai Spiced Sweet Potato Doughnuts 🍩
I baked these babies for some friends who were visiting, and I was multitasking and packing up our apartment at the same time. In my distracted state, I pulled them out of the oven 5 minutes early, leaving them a bit doughy. However, when baked for the correct amount of time, these doughnuts are sensational! They're far more nutritious than your regular doughnuts, being filled with sweet potato, GF oat flour and flaxseed meal. I added @pranachai
to the mixture and we also sipped on @pranachai

One year ago today (the morning after the Winter Solstice), I opened this account and posted my first recipe: this Creamy Vanilla, Chocolate & Coconut Lamington Porridge! I started the account after having being diagnosed with an autoimmune disease about a year beforehand, which meant having to give up gluten and really focus on eating nourishing foods to heal my body. I have since completely stopped my medication and have surprised my doctors by having no more signs of the disease. I believe a lot of this has to do with reducing stress and focusing on healthy food. I started with an entire collection of creative porridges to help beat the winter chill. One year on and I am absolutely loving creating recipes and delicious, healthy meals to help others enjoy a healthy lifestyle that doesn't let you miss out on a thing!
Thank you to those of you who have been following me since day one, and those who joined me just yesterday. I hope the rest of my journey can be of inspiration and help. Exciting new things are coming in mid July. Stay tuned! 💛🎉

Passion Fruit Sponge Kisses ✨
These delightful gluten, dairy and refined-sugar free morsels are unlikely to last long. The sponge is incredibly light and fluffy, the passion fruit curd is sweet, tangy and creamy and the coconut cream is perfectly thick and velvety! They are best eaten on the same day they are made, which certainly wasn’t a problem in our house. They lasted all of about 10 minutes!! Vegan Red Velvet Cheesecake Brownies 🤤
These brownies are rich and gooey and full of goodness! They are vegan and gluten free and contain no grains, making them paleo! I have used @teamgoodness
's amazing new Red Velvet Latte blend, which is made of raw cacao, beetroot powder and cranberry powder. Bursting with antioxidants, it not only adds nutritional value and colour to these brownies, but it also adds the most delicious flavour! These brownies are quick and simple to make. Just take note that you will need to soak the cashews for 4 hours or overnight to ensure they blend into a smooth ‘cheesecake’ mixture. I strongly suggest you give my Pumpkin, Halloumi, Fig & Walnut Pesto Pizzas a try! However, as fig season is over, I suggest you replace them with pear instead. I did just that last night and the result was absolutely scrumptious! Just slice a beurre bosc pear, drizzle with olive oil and add it to the oven with the pumpkin in the last 5 minutes and then add it to the top of your pizza with all other toppings.
This pizza is full of sweet and salty flavours and amazing textures of soft roasted fruit and veg and a crispy buckwheat base. (Omit or replace halloumi if you're vegan/dairy free).
