My homemade granola bar 💕
~ 2 tablespoons - chia seeds
~ 1/4 cup - cacao nibs (sometimes I use dark choc coated goji berries)
~ 1/2 cup - macadamia nuts
~ 1/2 cup - walnuts
~ 1/4 cup - sunflower seeds
~ 1/4 cup - pepitas
~ 1/4 cup - almonds
~ 1/2 cup - coconut flour
~ 2 tablespoons - raw honey
~ 1/4 cup - tahini
~ 1/4 cup - liquid coconut oil
~ 2 eggs
~ 3 teaspoons - mixed spice
~ pre heat oven to 180. Line trays with baking paper.
~ put all dry ingredients into blender (you want to see a few chunks). Add wet ingredients until incorporated into mix.
~ pour out mixture into trays and flatten with back of spoon.
~ bake for approx 20mins (depending of how thick your slice is) at 170 or until the top has a nice golden crunch. Let cool for 20mins before slicing, makes about 15 squares.
~ store in an air tight container in the pantry or fridge for upto 2 weeks.

🌶This Mexican cauliflower ‘fried rice’ is great on its own or as a side dish.
▫️3 cups Cauliflower Florets (stems removed and washed).
▫️1 tablespoon coconut oil.
▫️1 small onion (finely chopped).
▫️3-4 Garlic Cloves (minced).
▫️1 jalapeno (finely chopped).
▫️2 Tomatoes (finely chopped).
▫️3/4 cup diced or capsicum (I like to use both red and green).
▫️1 teaspoon Cumin Powder.
▫️1/2 teaspoon Paprika Powder (or red chilli powder).
▫️1 tablespoon chopped. ▫️Coriander.
▫️Salt to taste.
▫️More coriander, spring onions, sliced avocados, jalapenos, lime juice, greek yoghurt to taste. 😊 .

Cold snap = SOUP. This vegan friendly pumpkin soup is super easy and so delicious.🤭💕
❄️1 tbs Coconut Oil.
❄️1 onion coarsely chopped.
❄️2 cloves garlic grated.
❄️1.5 kg butternut pumpkin. peeled and chopped, (1.5kg).
❄️1 lemongrass stalk finely chopped or grated.
❄️1 tbs fresh ginger grated.
❄️1 bunch coriander.
❄️1 litre vegetable stock.
❄️400 ml coconut milk.
❄️Remove the roots and stalk ends from the coriander. Wash the leaves and dry with paper towel before roughly chopping. Repeat for roots and chop finely.
❄️Heat the oil in a large saucepan over medium-high heat before adding the onion and garlic. Cook until the onion becomes translucent.
❄️Add the ginger, lemongrass and coriander roots and stalks.
❄️Cook until the stalks become soft before adding the pumpkin.
❄️Toss the pumpkin in the oil and cook for 5 minutes.
❄️Add the vegetable stock and bring to a boil before reducing the heat to low.
❄️Cook for 30 minutes or until the pumpkin is tender. Remove from heat and allow to cool slightly.
❄️Pour the soup into a blender and blend until smooth. Add most of the chopped coriander leaves reserving some to garnish the soup. Blend until the soup is speckled with flecks of green.
❄️Return to a clean saucepan and add the coconut milk. (I like to only add half the milk, reserving the rest for garnish). 😊
