Phew. Week one of run club is in the books. 👍 It was a bit of a learning curve going from being barely able to run five minutes in one shot to running 8.1 km this morning!! I'm learning that if you push yourself, you'll find you're much more capable than once thought. 🏃♀️
Done and done on a gorgeous day! I was a little slower than I wanted but that's ok. I got all 11 miles in and I'm feeling good! Two weeks and I'm doing my 13.1 #rundisney

Breakfast and lunch for the week! Breakfast is 3SP for 2 Banana Bread Muffins (3SP), 2 halo top oranges (0SP) and a Kiwi (0SP)! Lunch is only 7SP and it's going to be a hard boiled egg(0SP), 8 slices of turkey pepperoni (1SP), 5 reduced fat Ritz crackers (2SP), 1 lite Babybel cheese (1SP), 3 Caprese Wontons (3SP) and some cherry tomatoes (0SP). I am starting to get the hang of this meal prep stuff!
So this was a pretty bloody tasty dinner! Katsu chicken and noodles. 7sp for the noodles and breadcrumbs. All the rest free!!!!! I will, without doubt, be making this one again. ☺️🍛🍽🍹
🍅🧀 Opened Up Caprese Wontons (thanks @emilybitesblog
for this AMAZING recipe) Last time I did them as actual wontons but my husband gave me the idea to do them opened up (and totally saves time) so that's what we've got here! 1SP each! 〰 Recipe:
〰 48 Wonton Wrappers (I used Frieda brand) found in the produce department at Walmart.
〰 48 Grape Tomatoes cut into 4 pieces.
〰 A whole container of the Fresh Mozz Balls cut in half (1 OZ is 3 pieces).
〰 Basil ripped or cut up (put as much as you'd like in each wonton). 〰Preheat oven to 350 Degrees. Spray muffin tin (I used a mini muffin tin with 24 slots). Put one wonton wrapper into each slot. Add your basil, tomatoes and 1 piece of your cheese that was cut in half. I sprayed them with olive oil once they were all assembled and then put them in the oven for 15 minutes. Drizzle with basalmic glaze if you're into that (you should, it's DELISH) and enjoy! The basalmic glaze I use is the Rachel Raye brand. I put it on almost everything. Pizza, chicken, roasted veggies. So good!
Throwback Brunch! 🍳 We were in Washington, DC in December, and I’ve been dreaming of this bowl of brunch ever since!
It looked SO interesting on the menu, I had to order it! Chorizo, black beans and potato topped with two eggs, a sprinkle of cotija cheese and Fresno chiles.
Spicy 🌶 to say the least, and super delicious! 😋

4 Points for unknown cooking oil
2 Points for the cheese
I think I could replicate this at home and definitely save Points on the oil, but man, the chorizo is high in Points! Do you have a turkey or chicken chorizo you like? What brand?

🍌🍓 Banana Strawberry Muffins (2SP each) or (3SP for 2) ❗❕ 〰 Recipe: 〰 4 Ripened Bananas mashed up
〰 1/2 Cup of frozen strawberries thawed mashed up (can use fresh cut up) 〰 1 Cup Quick Oats 〰 3 Tablespoons of Sugar Free Hershey Chocolate Morsels
〰 2 Whole Eggs 〰 1 Tablespoon Vanilla Extract
〰 1 Tablespoon Ground Cinnamon
〰 Preheat oven to 350 Degrees. Add all ingredients to a bowl and stir until all mixed together. Spray a muffin tin *I used one for 12 muffins* and fill each section with an equal amount of the mixture. Bake for 40 minutes or until completely cooked through (so they aren't too moist). That's it. Seriously, the easiest breakfast ever.
Well .. my meals this weekend have consisted of almost nothing but fast food. I could have chosen “healthier” or more point friendly options at these places but I didn’t. I could tell you what my excuses are but in reality, there aren’t any. I chose this food, consciously. I may still be far from having a healthy relationship with food but I strongly believe that the CONSCIENCE choosing of food, healthy or not, is a huge step in the right direction for me. I don’t hate myself for choosing these meals (my stomach doesn’t love me though 😬) because in the past, that hatred has only caused a downward spiral. I’m not worried that I’ve just derailed my progress. I’m not worried that these choices will continue for days, weeks, months. What’s done is done and I’m moving on. •
I’m posting this for accountability but also to hopefully keep someone else who made some unhealthy choices lately from giving up on their journey. My goals are still priority and I’m proud of my progress, inside and out! •
That being said, I am going to set myself up for success this week with a huge shopping trip planned for this afternoon and meal prepping like a BOSS 🙌🏼 .

Made a batch of Copycat Red Lobster biscuits for dinner today.
1/2 cup Gold Medal self-rising flour
1/2 cup Fage plain nonfat Greek yogurt
1/4 cup lite cheddar cheese ( I use Trader Joe’s lite three cheese blend)
1 tsp onion salt
1 tsp garlic powder
1 tsp old bay seasoning
1 tsp Italian seasoning
Egg wash (1 tsp water mixed with a beaten egg)
1. Preheat oven to 400°. Combine flour and greek yogurt, cheese, garlic powder, old bay seasoning and onion salt
2. Sprinkle a little extra flour on the tabletop or whatever surface you plan on using to knead the dough. Place the dough ball on top, kneading it with your hands. If it sticks to your hands, sprinkle a little extra flour on it. Knead until it's a pliable dough.
3. Roll dough on a parchment-lined baking sheet and cut out circles with a 2 inch cookie cutter. Spray the top of the roll dough with non-stick cooking spray or you brush the tops with egg wash to brown the tops. Sprinkle Italian seasoning on top.
4. Cook for 20 min.
Serving: Makes 6-7 mini biscuits. One smart point each.
