It contains beetroot, roasted butternut squash, cucumber, edamame, carrot, pepper, wakame seaweed, mixed green leaves, quinoa and brown rice. Eating a broad array of colours (like the ones in this salad) has so many health benefits: · Purple foods (e.g. the Beetroot) – are high in antioxidants that contribute to overall health, disease prevention, and protects your cells from damage.
· Orange foods (e.g. the butternut squash and carrot) – contain Vitamin A and antioxidants to support the immune system and help to prevent cancer, heart disease and infections
