Makaronigrateng med sopp, purre og spinat. Smakte i utgangspunktet ikke så mye, men tilsatt ekstra pepper og parmesan ble den veldig god.
Pesto Zoodles 🙌🏼🥒
Zucchini noodles (zoodles) are the best substitute for any carbs your trying ignore 🙅🏼♀️ Instead of cooking mine, I mixed mine with some salt and let them sit in a strainer for 15-20 minuets to let some water out, them dabbed them with a paper towel. Then I mixed the zoodles with some pesto 😋
I accompanied that with some fried eggplant topped with Daiya Dairy Free Mozzarella Shreds and tomato. Instead using egg for my eggplant batter, I used almond milk which works as a great substitute. I laid this all over a bed of spinach and I loved it 😍

Red bell peppers stuffed with cooked rice, chopped carrots and chopped banana shallots and seasoned with organically grown rose petal sea salt, garlic powder and smoked paprika. Drizzle some virgin olive old before pouring a tin of tomato soup. Put them in an oven at 180 and bake for 45 minutes. Then, grate cheddar cheese over them and bake for 5 mins.
