Started my day today the best way 🙌🏼🍋🌿 Rehydrating my body to help my digestion and skin 💦 had some watermelon, and then some avocado on wholemeal seeded bread because recently my sugar cravings have been through the roof! And I realised that I wasn't getting enough healthy fats in my diet. A diet high in healthy fats keeps you fuller for longer, helps with hormonal function, curbs sugar cravings and can improve the appearance of your skin. I'm in need of these things right now so give me allllllll the avocados!! 🥑🥑🥑

My dinner. 🌱💚 Been feeling really good lately. Eating completely clean (no oil, no sugar, no alcohol, no processed foods), and working out everyday.
Creamy tahini & mustard dressing on a salad of baked veggies, fresh veggies and crunchy kale chips sprinkled with seeds 🌱
BY FAR MY FAV SALAD EVER!!!
• Cals 801
• Fat 70g
• Protein 19g
• Carbs 21g
• Net Carbs 9g
40g tahini (I used hulled), 2 TBSP @followyourheart
mayonnaise, 1.5 TBSP olive oil, 10g whole grain mustard seeds, 100g cauliflower, 45g eggplant, 1/2 small zucchini, 50g lettuce, 40g kale, 50g cucumber, 4g @hempfoodsaustralia
hemp seeds, 3g pumpkin seeds, 3g sunflower seeds, salt and pepper and lemon juice to taste.
Bake cauliflower, eggplant and zucchini with 1 TBSP oil drizzled on top for 15 mins or until cooked. Bake kale chips separately on a low heat, I used the left over oil from the other veggies on the kale. Mix tahini, mayonnaise, mustard seeds, .5 TBSP oil, salt and pepper in together. Mix the roast veggies, fresh veggies and dressing all together and then mix in kale (I tried to keep the kale as crispy as possible). Add seeds and lemon juice on top and that’s it!

This quote is 👌🏻 not sure who wrote it unfortunately! I have been seeing a lot lately (or maybe I’ve been noticing it more) a lot of vegans saying things like “those vegetables aren’t vegan because they were grown in soil containing animal manure” or “the food at that place isn’t vegan friendly because they also sell animal products”. Take it to what ever level you like in your own life, but I think it is so important to think about why we choose veganism. While animal agriculture still exists it’s almost impossible to be 100% perfect. Instead, make a conscious effort to do the best that you can not to contribute to the suffering of animals. If you make it complicated it becomes off putting to potential vegans and unfortunately the majority of the population will choose whatever is easiest - let’s make sure that vegan is simple and easy to do and understand 🌱

On high heat, I stir fried a bunch of thinly sliced zucchini, cucumber, tomatoes and capsicum, pea sprouts, tahu goreng kunyit, silver needle noodles and rice vermicelli with vegetarian oyster sauce, light and dark soy sauce, and some superb Penang-made sesame oil gifted to me by @cendolllboy.
Let's just say that I won't be ordering char kway teow from outside for a very long time 😉

New Recipe Alert 📣📣 Spicy Tomato Basil Pesto Pasta 🍝
I was very busy with the dogs yesterday and needed to hook up a QUICK but YUMMY lunch so I came up with this delicious recipe 😋
It's easy, quick & super tasty 💚 - 🔷 Ingredients (Serves 2) 🔹For the Pasta
Pasta ( wholegrain if possible & best option is gluten free)
Himalayan pink salt 🔹 For the Pesto
1/3 cup Dessigated coconut / fresh coconut
1/3 cup fresh basil leaves
2-4 cloves of garlic (according to taste)
1,5 tbsp Chana Dal (soaked for 15min)
2 medium sized tomatoes
1 green chilli and/or red chilli powder
1 tsp sambar powder/masala powder
Pink Himalayan salt
Optional: lemon juice 🔹For frying (optional stage)
Olive Oil/ Groundnut oil/ Coconut oil - 🔶 Recipe 🔸Boil pasta with salt and 1 tbsp olive oil
🔸Combine all ingredients for the Pesto in a grinder / food processor / mixer (whatever does the job)
🔸Heat oil in a pan, fry onions until golden brown then add the grinded pesto & fry for a few minutes
🔸Add boiled pasta & mix together
