Like let’s be honest, nothing beats a good toasted sarmie, am I right or am I right??🤷🏼♀️ Anyway, I had a vegan chickpea toastie from @mugg_and_bean
the other day while we were out and about. I’m so happy they cater for vegans, and heathily!! We both were like, oh my word, we have to make something like this at home soon!👅
Fast forward to yesterday lunchtime, I created this beaut little CHICKPEA SMASHUP SANDWICH that went down an absolute treat, it was so satisfying yet still so fresh and light!
CHICKPEA SMASHUP SANDWICH
WHAT YOU NEED:
•1 can chickpeas, drained and rinsed
•1/4 cup thinly cut spring onion
•1/3 cup finely chopped red bell pepper
•1/2 cup finely chopped pickled onion
•1 cup chopped butter lettuce
•3 teaspoons apple cider vinegar
•2 tablespoons HOP mayo
•2 tablespoons Dijon mustard
•1 teaspoon hot English mustard
•Pinch of salt and pepper
•Your choice of bread, I used Whole-wheat Low GI from @woolworths_sa
•Optional: Slices of avo to top and baby tomatoes
WHAT TO DO:
Use a potato masher to mash the chickpeas in a bowl. You don’t want them fully mashed, keep some whole ones.
Then add all the other ingredients into the bowl with the chickpeas (obviously not the bread though!).
Mix everything together until everything is well combined and mixed.
Put the mixture onto your bread/toast.
I toasted my bread and topped it with some avo slices and tomatoes on the side!
It was so delish!
You could defs make this into a toastie by putting another peice of toast on top, but I felt like a fresher and lighter meal so made mine an open sarmie.
