I always loved the tangy sort of sparkling sensation of slurpees from 7/11, and was so mind blown when I learned it was because they were carbonated. Inspired, I set out to make my own slurpee out of kombucha. I thought maybe the natural tangy flavor and effervescence would lend well to a frozen/blended beverage. It sure did! I made ice cubes out of cherry kombucha, and blended them with more kombucha. That’s as easy as it gets - just one ingredient! (And a bazillion bacteria...) #ohkaleyes
Whenever I have leftover veg, I google a recipe for the ingredients I have on hand, improvise a bit, and then usually end up with something tasty, like this salad:
🥦3 cups broccoli slaw (8 oz)
🥗15 brussel sprouts, sliced
🍎2 pink lady apples, diced
🍒1/2 cup dried cranberries
🥜1/4 cup roasted pumpkin seeds
🍯FOR THE DRESSING: 1/4 cup apple cider vinegar, 1/4 cup olive oil, 2 tablespoons lemon juice, 1 tablespoon onion powder, 1 teaspoon garlic powder, 1 teaspoon salt, 1/2 teaspoon each oregano and crushed red pepper flakes 🥣 Refrigerate overnight for best flavor!
I’ve talked to a number of people lately who have expressed distaste for Ezekiel bread. I agree that it doesn’t make the most delicious cold sandwiches in the world, but I love it toasted. The earthy crunchiness goes great with nut butters, avocado, and even grilled cheese! In fact, I’d even say it’s my favorite bread choice for the latter. For those who don’t know, Ezekiel bread is made from sprouted grains, which reduces the levels of inflammatory compounds. It’s also higher in protein and fiber than other types of whole wheat bread. When I’m not eating Ezekiel, I usually go for Einkorn sourdough because, well, it’s delicious. 😏 #ohkaleyes
More about probiotics...fermented dairy is less inflammatory than its counterpart (especially true if raw dairy!) As I mentioned yesterday, fermented foods pack a GREATER density of good bacteria than a pill or powder, and they are also SIGNIFICANTLY cheaper. I brew my own kombucha, but I find that the flavor of homemade is stronger than what I buy in stores. So, I cut it with seltzer. The result is a milder (and fizzier) and fantastically refreshing summer beverage. 🍹Kombucha is also a great source of probiotics. I prefer to boost my microbiome with naturally fermented foods rather than capsules. Not only does a glass of kombucha or a bowl of yogurt deliver a significantly larger number of good bacteria, but there is also more diversity in strains. An imbalance in a person’s gut bacteria is linked to almost all of the leading causes of death in America (except accidents.) 📊Balancing the microbiome can help prevent heart disease, cancer, diabetes, and even depression. I’ll drink to that! 🍻 #ohkaleyes
I get a lot of questions about coconut oil, especially considering the conflicting perspectives. Natural health gurus count it a miracle food, but meanwhile the WHO recently came out and re-emphasized that saturated fats should be kept to less than 10% of energy intake. Here's the skinny on this fat:
1) Saturated fat is associated with cholesterol, but cholesterol isn't bad. We need cholesterol, both HDL and LDL types. HDL cholesterol is often referred to as "good cholesterol," and coconut oil raises this "good" HDL cholesterol.
2) Inflammation is a more important factor than total cholesterol when considering heart disease. Studies have shown that the antioxidants and medium-chain triglycerides have anti-inflammatory properties.
3) Current recommendations for dietary oils are that soybean and other unsaturated oils are "healthier." Cash-crops like soybeans, corn, and sunflower seed oils are not only almost entirely GMO, but they contain high levels of glyphosate (pesticides) and contribute to inflammation by offsetting the proportion of omega-3's in the American Diet. The truth is, Americans don't need to be eating more PUFAs.
4) The best, healthiest sources of fats, regardless of the chemical structure, is from whole foods: nuts, meats, eggs, and raw dairy products. The healthiest form of food is always its natural design. #ohkaleyes
A delicious combo for warm weather. Ezekiel toast is one of my staples. In the winter I always go for butter, but I like to jazz it up with fresh ingredients in the summer, like tomato, hummus, or avocado. The avocado + toast combo is pretty trendy lately, which makes sense because it looks pretty. But it’s also a tasty and healthy choice! #ohkaleyes
📥When we view our health with an open mind, it’s so much easier to identify what our needs are, and how to meet them. 😴 Think about a time when you were feeling tired. A condemning attitude would come from the pursuit of a lengthy to-do list. A curious attitude would ask, “What do I really need right now?” The answer might be rest, instead of more coffee. 🥗Here’s another example: you’re feeling hungry. Surprised, and thinking you can’t possibly need more food an hour after lunch, you push through the grumbling, or even eat something like carrots with bulk. A curious attitude might lead to the realization that yesterday’s intense workout was catching up, and you were needing some extra carbs. 🍩Or maybe, a stressful day at work is leaving you agitated. A curious attitude might help you recognize that some meditation or a walk would help relieve stress better than the convenient donut in the office kitchen.
🍪We need a variety of foods in order to be healthy - physically, mentally, and emotionally. 📊It’s truly impossible to calculate our bodies’ exact energy and nutrient needs, or to follow a prescriptive diet plan exactly. Attempting to do so is far more stressful than it’s worth! It also takes the joy out of eating! 🥗Food is meant to play many roles in our life - yes, fuel, but also community, spirituality, and connection. #ohkaleyes
