Getting a little real with you today. I’ve been struggling with gut health and leaky gut. I’ve tested negative for SIBO a couple times and know I have bad bacteria in my body somewhere between my mouth and large intestine (large intestine appears to working just fine). Anyway, it is really no surprise I've had a flare recently with my autoimmune disease Multiple Sclerosis. Life got stressful and tough for several months. Couple that stress with my gut issues, and it was pretty much the perfect storm for a relapse. So, I've been stepping back a bit, simplifying life and focusing on healing my gut. It's hard. I'm not gonna lie. But, life is such and it's all a journey. I'm trying to find ways to enjoy this process and the journey because that's what it is all about right? You'll never be truly happy when you finally reach your destination if you don't fall in love with the process and journey to get there. And is the destination really ever an actual end point?! Not so much in my experience - it's just another stop along the path. Soooo easy and healthy recipes like this chicken avocado salad with bacon make life enjoyable and less stressful. COPYCAT LIGHTENED UP RUBIROSA TIE DYE #PIZZA
(Tomato, vodka, pesto) 🍕 @rubirosa_nyc
tie dye pizza is literally the greatest thing to exist, but seeing as I am in Virginia I had to get my craving somehow. I made a “lightened up” (as lightened up as pizza can get...) version using a Greek yogurt & flour dough with vodka sauce sans vodka & heavy cream (aka I used half & half). This hit the spot babbbbbyyy 😍😍😍
For the dough: in a large bowl, combine 1 cup all purpose flour, 1 1/2 teaspoons baking powder, 1/2 teaspoon salt, 1 tablespoon dry italian seasoning, and 1 cup drained non-fat Greek yogurt. Combine until it forms crumbles, then flour a baking sheet and roll into a ball. Then, using a rolling pin (or bottle of wine like me [how do I not own a rolling pin?]), roll until very thin (if you want thin crust). It will still cook up thicker than it appears.
For the tomato and vodka sauces: Collectively, I minced 4 cloves of garlic, half an onion, 1 large can of San Marzano tomatoes, and 4 teaspoons of tomato paste. In separate pots and dividing the ingredients in half, I cooked the garlic and onion in olive oil for about 3 minutes. Then I added the rest of the divided ingredients.
⁃For the tomato sauce, I added a splash of balsamic vinegar, fresh basil and parsley, and italian seasoning
⁃For the vodka sauce, I added the same, plus 2 teaspoons red pepper flakes.
Let both simmer on low for at least 20 minutes. Then, using a hand mixer, I pureed both sauces until smooth. Then, for the vodka sauce, start with adding about 1/4 cup of half & half, followed by 1/8 cup parmesan cheese. Add more as needed to taste. —
For the pesto: I used my lemon arugula basil pesto recipe that I posted a few weeks ago because I still had a few frozen cubes.
Combine all of this on the rolled out dough, add fresh basil, and cook at 450 for 12-14 minutes or until crust is brown. #instagood

Despite being a die-hard Beatles fan, I hate that line. Love is only the beginning. You need so much more to make any relationship work, whether it’s with your partner, child, dog, job, garden or (most importantly), yourself. You have to work on it, constantly. I love my garden, but if it wasn’t thought about, watered, weeded, nourished and given respect to act like itself it would turn into a mess. You need so much more than love for something to work. Not sure why I’m sharing this, I guess that line irks me some 😂
Without further ado: blueberry, lemon and coconut fat balls! I posted this recipe yesterday, but not so obviously, so here it is!
1 cup raw cashews
3/4 cup shredded coconut
1/2 cup dried blueberries
1 tsp @unicornsuperfoods
Rind of 2 lemons
1/4 cup lemon juice (approx Juice from 1)
1/4 cup softened coconut butter
5-10 drops lemon essential oil (optional)
1. Add cashews and coconut to a high-speed food processor and pulse until small crumbs form.
2. Add blueberries, blue spirulina and lemon rind and pulse again until combined well (about 12 times). 3. Add the remaining ingredients (lemon juice, coconut butter and essential oil if using). Blend until a big sticky ball forms.
4. Finally, with damp hands, roll into balls. Big or little, even or not. Whatever pleases you!
