this was my third dining visit to @sgtakayama
. i have the monthly omakase course each time with the sake tasting option. it was, as with previous visits, divine. it’s common for diners to visit japanese restaurants for japanese produce. seafood, wagyu, vegetables and fruits from japan are second to none.
at takayama, while the produce is the best that is allowed to come out of japan, it isn’t the highlight of the meal. what chef taro @taro.g.sin
does with it makes takayama what it is, undeniably refined. every creation in his omakase courses clearly exemplifies his cumulative experience; he started in 3 star establishments in japan before being responsible for meals for dignitaries and royalty alike. he brings a wealth of experience to the table. literally.
painstakingly created accompaniments to carefully crafted produce are the hallmarks of his cuisine. these delicate creations are sensational. so is the dining experience, intimate and attentive.
