I started by slicing and cleaning red and green peppers. I boiled until slightly tender (about 15 min)
In a large pot I heated up a tbsp of olive oil. I then sautéed a quarter cup of diced red and green onions, 1 tsp of chopped garlic and 1/4 cup of diced onions. I added in a cup and a half of long grain rice and cooked it in vegetable broth (I never measure but I assume it was about 2 cups) plus a can of tomatoes with green chilli. Once it cooked down a bit I added 1 tsp each of cumin, paprika, chilli powder and salt and a pinch of cayenne along with a half cup of frozen corn and a can of black beans. Once done, I filled the peppers and topped with vegan mozzarella, diced avocados and cilantro plus a wedge of lime.
