One of my favorite weekly meal prep recipes. A yummy oatmeal bake.
2 cups oats
4 tbsp coconut sugar
1 tsp baking powder
1-2 scoops vanilla protein powder (whatever the serving size and whatever protein you prefer, I use a plant-based powder @vega_team
, or @gardenoflife
2 cups unsweetened vanilla almond milk
1 large egg
1/2 cup flaxseed
3 tbsp coconut oil, melted
1 tbsp vanilla extract
2 tsp cinnamon
1/2 cup fresh or frozen blueberries (or raspberries)
1/2 cup chopped almonds (or walnuts)
Optional: sliced bananas to top
Pre-heat oven to 375F
Spray casserole dish with coconut oil
In a large bowl, mix all of the dry ingredients with the melted coconut oil (oats, sugar, flaxseed, protein, baking powder, cinnamon).
In another bowl, mix wet ingredients (milk, egg, extract)
Combine the wet ingredients with the dry and mix well.
Top with chopped nuts and a few more berries, sprinkle with a little more cinnamon.
Bake for 30-35 min.
