VEGAN COOKIES! This is going to fill in for my usual lunchbox post because the kids have the day off and I’m letting them feed themselves today. So far it’s been cookies, popcorn, and french fries. But y’all. I’m so excited because this cookie is from Starbucks. And no, I doubt it’s very healthy. However, this is major because it’s mainstream. I want everyone to know that dropping animals from your plate has never been easier and it’s only getting better! This cookie may have its fair share of oil and sugar, but it has zero dairy, eggs, cholesterol or cruelty! And I’m totally down with that. This is my version of one of those cute cooking videos ❕❕❕❕❕❕❕❕ Mexican stuffed pepper taco salad get in my belly you tasted sooooo gooood 🔥🧡🌮🌶🥙🥒🥗🌮🌶🥗🌮 Ingredients: -4 to 6 large peppers -2-3 cups of your fav rice(I used brown) -1 can of pinto beans -1 jar of salsa -1 bunch of cilantro -meat free Mexican crumbles I use the Light Life brand -Vegan Mexican cheese -Spring mix lettuce -Tortilla Chips -Asparagus(optional) -1 fat backwoods 🌮🥗🌶🌮🥗🌶🌮🥗🌶 . . . Step by step how to: 1. Begin boiling the rice and sautéing the meat free crumbles with a tablespoon of oil and a little bit of the salsa 2. While the rice and crumbles are cooking cut the tops off of the peppers and make sure the seeds are taken out 3. Once the rice is finished you can make the filling. Combine rice, beans, crumbles, remainder of salsa, and half of the chopped bunch of cilantro 4. Fill the peppers and bake them in the oven on a greased pan at 350 degrees for 30-45 minutes depending on how cooked you like your peppers 5. While the peppers are cooking you need to use your time wisely by smoking a fat blunt outside 😎😎😎😎 6. Prepare plate with salad mix, remaining cilantro, tortilla chips, and your dressing of choice. I used a citrus balsamic and I used very very little. I also topped off the salad with some sautéed asparagus because who doesn’t like asparagus 🙃 7. Take out peppers sprinkle on some vegan cheese if you please and place back in oven to melt. Remove once again and toss those suckers onto your salad and bam 💥 . . . This was sooo sooo good you guys!! And I had so much fillet left over so I’m going to buy more peppers and eat this all week 😩🔥🔥🔥🥗🌶🥙🌮 I don’t normally count calories but in case anyone is curious depending on the size of the peppers and if you use cheese they will range from 300-500 calories each and if you keep the salad super simple with a light dressing it will be around 100-200 calories. Who else likes Buddha Bowls? 🙋🏼‍♀️ They’re my new jam. I had a delicious vegan one yesterday at @true_food_kitchen with sweet potato, turmeric, charred onions, snow peas, grilled mushrooms, avocado and hemp seeds. Everytime I eat here I get reminded how tasty real, fresh and ‘in season’ food can be 😋 .. I know it’s not always possible but when it is I’m a huge advocator of eating less from a box and more from mother earth 🌏 I get that it can seem overwhelming to make the shift but it really doesn’t have to be that complicated. Just start simple. Buddha bowls are super simple and jam-packed with macro and micro nutrients from colourful veggies, healthy grains, and proteins. And for recipe inspo check out @buddha_bowls

Remember those lemon poppyseed protein balls? Well welcome to some new experiment that is even better.....these are orange chocolate coconut protein balls (that's a mouthful). These are decadent and almost feels too good to be true that they are healthy. ========================= 3 Scoops of chocolate plant based protein 1/2 Cup quick cook oats 1/2 TBSP coconut sugar 6 TBSP fresh squeezed orange juice 1 TBSP fresh orange zest Combine ingredients in bowl and begin to add water a TBSP at a time while mixing (max is 6 TBSP). Once you get a slightly sticky but solid consistency dip out with scoop (TBSP size) and roll into a ball. Roll in desicated coconut and store in container in the fridge. Recipe usually makes 12 to 16 balls, it's easy to double or triple. INGREDIENTS: . Healthy no-bake brownies as the base (direct link for the recipe in my bio @elavegan ) . Cashew cream: . 1 cup cashews, soaked for at least 1-2 hours (150 g) 1/2 cup (homemade) nut milk (e.g. almond, cashew, coconut) (120 ml) 3 tbsp raw agave syrup (60 g) 1 tbsp cacao butter, melted (15 g) Pinch of ground vanilla bean (optional) . Green layer: . 1/3 of the cashew cream (check instructions) 1/2 medium sized avocado (120 g) 1 1/2 tbsp raw agave syrup (30 g) 1 tbsp lime juice 10 g fresh greens e.g. spinach (optional for a vibrant color) 1 tsp @superelixir Alkalising Formula from @welleco . 🥕 TINGA DE ZANAHORIA CON JAMAICA para este delicioso #lunessincarne 🌱Este experimento salió delicioso, es saludable, rico, y sencillo de hacer. Les aseguro que les va gustar muchísimo!!! Yo decidí ponerle Jamaica ya que me regalaron orgánica (por cierto, muy rica y súper diferente a la Jamaica normal. Las acompañe con frijoles refritos, aguacate y kimchi de @kombucha_simbiotica Les comparto la receta :D INGREDIENTES 💁🏻‍♀️ 6 zanahorias ralladas 1/2 tz de flores de Jamaica cocidas, escurridas y picadas. 1 cebolla pequeña cortada en medias lunas (fileteada) 4 pz de jitomate 1 pz de chile chipotle adobado enlatado (o al gusto) 1 hoja de laurel 1 pizca de mejorana o tomillo Sal y pimienta la gusto PROCEDIMIENTO Licua el chile chipotle con los jitomates, la sal y pimienta. Si es necesario añade un poco de agua. Vierte la mezcla anterior en el sartén, integra bien con todos los ingredientes y coloca el tomillo, mejorana y la hoja de laurel. Una vez que hierva retira la hoja de laurel para que el sabor no sea muy intenso. ☀️Bonito inicio de semana 💚
🌿 S M O O T H I E RECIPE 🍌 This might sound strange but I don’t remember the last time I had a smoothie 🤔. While last year I was all about smoothies for breakfast, in the past few months I moved away from them into having oatmeal, granola, fruit or avocado toast from breakfast. . But this morning my body was screaming “give me a smoothie pls” so I listened 🤗. I had this smoothie post my cycling and gym session this morning. Recipe below 👇🏻 . INGREDIENTS - 1 medium beet - 1 tbsp @go_raw super simple sprouted granola - About a cup of coconut milk (depending how thick you want your smoothie) - 1/2 banana - A few ice cubs - A handful of spinach - 1 scoop @gardenoflife raw organic protein . DIRECTIONS - Add the first 3 ingredients in your blender and blend until smooth - Now add the rest of the ingredients and blend until smooth - Enjoy 😉 (*it makes about 2 of the cups shown in the photo - and I had all of it 😜)
