I baked myself a birthday cake on my birthday last night and frosted and decorated it today. I had the coolest, craziest, and most delicious idea for my birthday cake while I couldn't sleep the night before my birthday. I felt like having a pecan pie baked inside of a matcha-pandan cake with a peach-cream cheese frosting. So, like everything in my life, if I want something, I need to do it myself. Also, I don't think anyone has ever made a cake like this before. So, like everything else in my life, you don't know what's possible until you try. As usual, I don't use recipes, so I just made it up. Cooking and baking are both an art and science, and as both a man of art and a man of science, I used both my creativity and knowledge to create this delicious monstrosity. I used 4 eggs, 1/2 cup of coconut oil, 1 cup of almond milk, 1/4 of matcha powder, and 1 tablespoon of pandan paste for each cake layer. I put an entire pecan pie upside-down in one of the cake pans. I made peach-flavored cream cheese frosting by mixing in peach jelly. I put canned peaches between the two layers and a fresh peach on top. The frosting didn't come out as nice looking as I wanted. Green cake crumbs got mixed in while I was frosting the cake. I am not a cake decorator. lol! However, the frosting tastes amazing. I will make this again and try to perfect it.
