✨Loving rainbow carrots lately! They’re so colorful and brighten up any meal. These beauties are Ginger-Turmeric Roasted Rainbow Carrots . . -1 bag organic rainbow carrots - 1-2 tblspoon avocado oil - 1 tsp turmeric - 1 tsp ginger -1/2 tsp garlic -1/2 tsp black pepper - salt to taste . -wash and peel carrots - cut long ways and then in halves - toss in mixing bowl with avocado oil -add spices - mix to combine spices and coat carrots evenly - spray non stick spray on baking sheet - bake at 400 degrees for 30 minutes or until desired texture. Flip carrots to other side half way through baking. . . Enjoy 🥕🥕🥕

I was freaking out yesterday. Because I was being too hard on myself. There was something I promised myself I was going to get done on Monday night. I didn’t do it. . . . Then I went down the social media rabbit hole. So I went to bed with stressed thoughts and woke up and went right back down the social media rabbit hole. . . . That set me up for a negative spiral. I had all the negative thoughts all day and I couldn’t seem to break it. To the point that I couldn’t even focus on my work by the end of the night. . . . I got home and my sweet husband had wonderful words of wisdom for me. He has been reading “you are a badass” by @jensincero. (Who is this guy?!). He reminded me that our vibration means everything. . . . If we can’t stay positive, we can’t attract positive things. If our vibration is negative, we attract negative things. And although sometimes we get frustrated, if we can stay focused on the end goal and BELIEVE it is on its way, we will continue to head in the right direction. . . . Parsnip Fries with Truffle Oil Ingredients: 4 medium parsnips, peeled 2 tbsp extra virgin olive oil Salt and freshly ground pepper 2 tsp truffle oil 2 tbsp parsley, chopped Instructions: 1. Preheat the oven to 400 degrees F. Slice the peeled parsnips into thin fries. Toss in a bowl with the olive oil, salt, and pepper. Spread out in an even layer on a rimmed baking sheet & bake for 20 minutes. 2. Turn the fries over & place back in the oven. Turn up the heat to 450 degrees F. Bake for an additional 5-10 minutes until crispy, watching closely to make sure that the fries do not burn. 3. Place the fries in a large bowl & toss with the parsley and truffle oil. Serve warm, topped with additional sea salt if desired.

Sweet AND savory sweet potato toast dinner from last night. SUPER easy to create for late nights. The savory toast was topped with 🥑, scrambled eggs, sea salt, pepper, garlic, paprika, and red pepper chili flakes. The sweet toast was topped with @traderjoes almond butter, sliced 🍌, crunchy @kitchfix sea salt cocoa granola (this stuff makes everything better), and drizzled with @traderjoes cashew butter😋. Creamy Paleo Chicken Skillet with Mushrooms and Bacon. 2 boneless skinless chicken breasts, cut into 1-inch pieces 3 slices bacon 1 small yellow onion, chopped 1/2 red bell pepper, diced 1/2 yellow bell pepper, diced 6 oz. white mushrooms, sliced 1/2 tbsp white wine vinegar 1 14.5-oz. can coconut milk 2 cups fresh kale, stems removed and shredded Salt and pepper, to taste Instructions: 1. Cook the bacon in a large skillet until crispy. Remove to a paper towel-lined plate & crumble. Set aside. Discard the bacon fat from the pan except for one tablespoon. 2. Add the onion to the pan & sauté for 4-5 minutes until soft. Push the onion to one side & add the chicken to the pan. Lightly brown the chicken, & then stir in the bell peppers & mushrooms. Cook for an additional 5 minutes. Stir in the bacon. 3. Add the white wine vinegar to the pan to deglaze. Add the coconut milk & kale. Cook for 3-4 minutes until the kale is wilted & the sauce is slightly thickened. Season to taste with salt & pepper. Serve warm.

Godaste & krämigste blomkålsmoset 💛 . 2-3 portioner Ingredienser: 1 liter finhackad blomkål 2 msk kokosolja 4.5 dl kokosmjölk Havssalt Skär blomkålen i bitar och finhacka den i  matberedare (de tar endast några sekunder). Stek blomkålen i kokosoljan med salt på medelhögvärme tills blomkålen börjar få färg. Häll i kokosmjölken. Koka länge tills de inte är kvar någon vätska i botten av stekpannan. Mixa blomkålsblandningen med stavmixer tills du har en slät och fluffig mos. . Ingredients: 2 tbsp extra virgin olive oil 1 medium yellow onion, diced 4 cloves garlic, minced 2 tsp cumin 2 tsp cinnamon Salt and pepper, to taste 1 lb. sweet potatoes, peeled and cubed 1/2 head of cauliflower, cut into florets 2 cups vegetable broth 1 15-oz. can diced tomatoes Pinch of saffron threads 2 medium zucchini, diced 1/2 preserved lemon, finely chopped 1 cup green olives, pitted and chopped 2-3 tbsp fresh parsley, chopped Slivered almonds, for garnish Instructions: 1. Heat the oil in a Dutch oven or heavy-bottomed saucepan over medium heat. Add in the onion, garlic, cumin, & cinnamon. Sprinkle with salt & pepper. Sauté for 5-6 minutes or until the onion is soft. Stir in the sweet potatoes & cauliflower & cook for 3 minutes more. 2. Pour the vegetable broth and diced tomatoes into the pot. Add the zucchini & a large pinch of saffron threads & stir. Bring to a boil, and then reduce the heat to simmer and cover. Cook for 15-20 minutes until the vegetables are tender.
