made an amazing Vanilla Cupcake mix from almond flour, organic coconut sugar, arrowroot, organic coconut flour, baking soda, sea salt, eggs, olive oil, water, and vanilla extract.
I know they look more like pumpkin muffins b/c of their coloring (which the hubs and I thought you could probably leave out the vanilla & add in some pumpkin spice seasoning and they might just make good pumpkin muffins!😍) but I assure you they taste like vanilla😂
The icing is ALSO @simplemills
made from organic palm shortening, organic powered sugar, organic coconut oil, organic tapioca, vanilla extract, sea salt, organic rosemary extract and monk fruit extract.
These are so easy to whip up & they bake for only 15 min! SO easy for any occasion or, you know, just a normal week night😏

Bacon-Wrapped Roasted Asparagus
(recipe below) Another one for all my fellow salad nerds 🥗🤓 CHICKEN BACON SALAD with ORANGE MAPLE DRESSING!
I could eat salad every night as long as it is like this.
SALAD NERDS UNITE 👊
1 Lb Boneless Skinless Chicken Breast - baked or grilled*(sliced)
2 Heads Romain Lettuce (chopped)
1 Cup Micro Greens
15 Sugar Plum or Cherry Tomatoes (halved)
1 Avocado (sliced)
3 Pieces Cooked Bacon** (chopped)
1/2 Cup Pecans (chopped)
1/2 Cup Olive or Avocado Oil
2 Tablespoons Fresh Squeezed Orange Juice
1 Tablespoon Apple Cider or White Wine Vinegar
1 teaspoon Dijon Mustard
2 Tablespoons Maple Syrup
1-2 Tablespoons Mayonnaise (to desired thickness)
Combine all said dressing ingredients in dressing shaker or glass mason jar. Close top and shake vigorously until fully combined.
Assemble all salad ingredients and drizzle with dressing.
Recipe Notes *Roasted Chicken: Preheat oven to 425ºF. Salt and pepper chicken breasts, grease roasting dish with oil and place chicken in roasting dish. Bake for 25-30 minutes or until internal temp reaches 165ºF (time varies depending on thickness) Or, grill until 165ºF internal temp. **My preferred bacon preparation method:
Preheat oven to 400ºF. Line baking sheet with foil and spray or grease with oil. Lay bacon flat on baking sheet. Bake for approximately 15 minutes or to desired doneness. (flip half way through)

Little stinkers! I've been looking for the chicken eggs for days and I finally found them tucked in between the wood shavings and burlap. It really shouldn't have been that hard (because my yard is so dang small), but they went behind where I had checked and under the burlap, that I use for the garden. They are crafty little ladies. 🐔
Also, none of my #ameraucana
hens are laying. I think one may be having some issues and the other two are on strike in solidarity. It looks like I'll be playing chicken doctor later on. I swear, the fun never ends around here.
I'm just happy I found some this morning, because I was seriously thinking Coq Au Vin for dinner. No joke.

**BUN-LESS BURGERS** I’m traveling to Spain soon, so I’m trying not to eat as many carbs • so whether you’re gluten-free or just don’t want to eat bread, these are a great alternative to a bun • my secret - these are cabbage !! • why use cabbage instead of lettuce? • more fiber and vitamin C • give it a try and let me know what you think • ▶️Ingredients for the burger: 1lb lean beef, 1 egg, 2 tbsp bread crumbs or oat flour, 1 tbsp fresh minced garlic, 1 tbsp onion powder, 1 tsp cumin, 1 tsp chili powder, 1 tsp smoked paprika, 2 tbsp scallions
1️⃣Mix all ingredients together and grill each side for about 3-5 minutes - times will vary
2️⃣Assemble your bun-less burger with vegetables and condiments of choice

Blend in a food processor three large carrots, a cup of peas, a tablespoon of tahini, a cup of spinach, one small zucchini, a tablespoon of balsamic vinegar, two dates. Raw and very high in protein!💪🏻👋🏻🏃🏽♀️
These Lemon Poppy Seed Paleo Pancakes are to die for! You need to try them.
Lemon Poppy Seed Paleo Pancakes
3 tbsp almond milk
2 tbsp honey
1 tbsp coconut oil, melted, plus additional for pan
1 tsp vanilla extract
Zest of two lemons
1 ripe banana, mashed
1/4 cup coconut flour
1/4 tsp baking soda
Pinch of salt
1-2 tbsp poppy seeds
1. In a large bowl, whisk together the eggs, almond milk, honey, coconut oil, vanilla, and lemon zest. Add in the mashed banana.
2. In a separate bowl, whisk together the coconut flour, baking soda, and salt. Add the dry ingredients to the wet ingredients. Stir together until just combined. Fold in the poppy seeds. Let the batter sit for 5 minutes to allow the coconut flour to absorb the moisture.
3. Heat a griddle or non-stick skillet to medium-low heat. Coat the pan with coconut oil. Pour about 1/4 cup of batter onto the skillet. Cook for 3-5 minutes until the bottom is cooked through, and then carefully flip. Cook for another 2-4 minutes until lightly browned. Repeat with remaining batter. Serve warm.
