Stir frys are my JAM. Protein, veggies & sauce - doesn’t get any easier and it certainly doesn’t get any tastier! Stir frys are extremely versatile, meaning you don’t have to follow any recipe to the T - but sometimes we all need a little inspiration ... so I present to you Pineapple Pork Stir Fry
2 T avocado oil
2 boneless pork chops, thinly sliced
2 bell peppers, chopped
1 onion, chopped
1 cup of pineapple, chopped
1/4 cup coconut aminos
1/4 cup orange juice
1 in ginger, grated
2 garlic cloves, minced
1 t rice vinegar
1 T tapioca starch
1 package of Trader Joe's frozen cauliflower rice
Green onions for topping
1. Add oil to a large pan over medium-high heat, once hot add the slices of pork in a single layer (you may need to do this in batches) let sear for 3 minutes then flip and sear for another 3 minutes. Remove from pan, put on plate and set aside.
2. Lower the heat to medium. Add peppers and onions to the pan, saute until peppers begin to soften and onions are translucent (6-7 minutes), add the pineapple and continue to cook.
3. Mix the ingredients for the sauce, ensuring that you whisk the tapioca starch with the liquids to incorporate.
4. Add the sauce to the pan, allow to cook for a few more minutes until the sauce thickens.
5. Cook the cauliflower rice according to the directions (I use the microwave typically) & serve the stir fry on top!

Birthdays call for reflection! This is a difficult post for me, but if it helps one person with their journey, it is worth it for me! I found this picture of me from two years ago and I remember this trip to the zoo like it was yesterday, I was in a lot of pain, but put a smile on for my boys. I had just met with my Endocrinologist and he told me my blood work looked fine and that we will just wait for the next autoimmune disease, and then start treatment. What?!? Thankfully my stubbornness wouldn’t accept this as a solution. I started reading a book a week on autoimmune disease and listened to podcasts on my way to work. I changed to a Paleo diet and after about 2 months saw about an 80% improvement in my health. I still felt like I was missing something so I started AIP and began researching naturopaths and found the amazing @drjolenebrighten.
Then I got to know coach Lori @crossfitsr925
and we became friends right away, we were struggling with the same issues with our health. Now after 2 years of healing I’m stronger and healthier than I have ever been, and I have so many people to thank for it!

There is no humane way to kill someone who doesn't want to die.
There is no humane way to terrify them. Even if the stunning attempt is successful (often it isn't) it's still hugely traumatic for the animal. Standing restrained in a stall waiting powerless for someone to shoot a bolt through their heads is mental torture.
From the moment they are loaded on to the trucks to go to slaughter, they are terrified.
Going into the slaughterhouse and waiting in the slaughter line is terrifying for them. They can sense and hear the fear from the others. They hear the screams and they smell the blood and death.
There is no humane way to bring someone into the world for the sole purpose of exploiting them for their reproductive organs and killing them for their flesh.
There is no humane way to eat someone's flesh and wear their skin.
All animals of the meat, dairy and egg industries end up at the slaughterhouse. The animals raised for milk and eggs are slaughtered when their production slows.
Male calves are destroyed because they will never produce milk, their flesh is packaged, labelled "veal" and sold.
Male chicks are destroyed at a day old because they will never produce eggs. They are suffocated, gassed or more commonly ground up alive.
Many animals suffer to death on farms before they even make it to the slaughterhouse.
Animals are persons, not products, not machines, not sources of food or clothing. They are not resources for us. They are not reusable or replaceable.
You either pay for and support violence, or you go vegan. There's no other option.

2 years after the first picture was taken my health went badly downhill and I decided to join the gym.
From skinny-fat, underweight, weak and fragile person, who struggled with low confidence, suffered cuz of poor health, eating unhealthy (bread, pizza, chips etc.) and not exercising at all...to happy, strong, independent, healthy and fit person, exercising in daily basis (lifting weights + calisthenics), eating whole unprocessed food with optimal possible health.
I didn’t go on a diet or 12 week transformation, I didn’t stick to trademill and cardio sessions. I turned my life upside down...permanently😁
I approached it like a boss-lady and started to do pull ups, push ups, heavy squats and deadlifts.
I changed my eating habits and started to cook more looking into what I eat instead of buying precooked meals.
Only thing I hugely regret is the fact that I waited so long with applying all the changes. I wasted so many years running my body down with bad diet, feeling unhappy and old.
Yup... I’m getting older (as we all are), but changing my lifestyle definitely slowed it down improving my skin also😋
What I’m trying to say is don’t wait any longer!
Sometimes small changes can make incredible impact on your physical and mental well-being forever 💪🏻✌🏻☺️
