I think every Monday should start with dessert, don’t you think? I was actually gonna to make a new batch of this frozen yogurt recipe this weekend with mango (yum!), but unfortunately it was dark and gloomy. So not really frozen yogurt weather. *sad face* But alas, I see sunshine on the horizon later this week! . And for those asking, you can absolutely make this dessert #dairyfree . Just use your favorite non-dairy yogurt. My favorites are @kitehillfoods for almond milk-based yogurt and @foragerproject for cashew milk-based yogurt. Just mix the yogurt with frozen fruit and 30 seconds later in your @Vitamix you can say, voila! Homemade, healthy, frozen yogurt! Happy Monday! 😊

FLUFFY LOW CARB + NO SUGAR PANCAKES. 🥞🥞🥞 . Here are the grain-free pancakes from my IG stories yesterday. The whole stack, including toppings, came out to 320 calories. Excluding toppings, the pancakes are about 150 calories, 11 grams fiber, 6 net carbs, and of course, fluffy AF. . To make them, I used @lakantosweetener low carb pancake mix but also added in a few stevia-sweetened chocolate chips. I topped with a couple pecans, 1/2 tbsp peanut butter, unsweetened coconut chips, cacao nibs, and lakanto monk fruit syrup. . As always, you can eat as is or top with whatever you like depending on your preferences. . So I'm sure this COULD be a little healthier if you did lettuce or a tortilla instead of a shell.. but why ruin a spicy good thing? Plus, when you're craving tacos.. you eat tacos. Easy peasy with no cheesy taco #MealPrep right here: - One Morningstar chipotle black bean burger - Two Spicy cheddar taco shells (that's actually a serving size, so don't judge) - half a mini container of wholly guacamole spicy guac. - one butterball lower sodium turkey bacon strip - raw slaw (😂) Spread the guac on the shell. Crumble your bacon and sprinkle it in. Split your burger and plop a half in. Stuff remaining room with slaw. Flavor perfection. Not the healthiest but definitely the quickest ramen DIY I've ever had😋 it's ramen noodles with spinach and cilantro pesto! Seasoned with salt and pepper and some roasted sesame oil and topped with sesame seeds!
