Some days call for salads and others for donuts. This is freaking delicious. 🍩
For many years we were very efficient about meal planning and it did us so much good. Writting it all on paper, going to the store only once a week and packing all of our food from home was so helpful, no only financially, but also health wise.
Going back to work with a 6 month old baby had contributed to us slacking. I mean, we do plan it all and shop once a week, but many meals get postponed and replaced with cheap cafeteria food. Also many tasty snacks got replaced with pre-packed candy. And a breakfast became a bowl of cereal. After failing multiple times to stick to the plan, I really want to try food prep! My to do list is not that huge any more and on Mondays, while my boy is in childcare, I want to get us all set with food for a week. So here is a little meal plan list (you can say I spent some time in Target during my US trip) and a list of stuff I want to make on Monday. Let's see how our week is rolling with meal prep.

4 STEPS TO TACKLE RESISTANCE (FEAR)🏆
Of course we all experience it! Whether you’re thinking about a new job, wanting to date again after a breakup, or trying to be a better version of yourself resistance (that little b) always seems to come up 👿 .

It’s really fear of the unknown and unfortunately it prevents us from doing the things we want really badly for ourselves 🤔
So how do you deal with it ⁉️
✅Step 1 is you have to acknowledge that it’s there in the first place. ✅Step 2 is that you have to take your emotions out of it and logically breakdown what happens if you let resistance (or fear) win and what happens if you show that little b who’s boss. What do you really want and can you get it if you let resistance stand in your way?
✅Step 3 is you move through the resistance even though it’s there. ✅Step 4 is you feel massive confidence and freedom from that little b. .

Baked oats this morning inspired by @cleaneatsbytay
1/2 cup quick oats
3/4 cup @califiafarms
almond milk (used 1/2 and it was too thick 😅)
1/2 smashed banana
1/2 tsp cinnamon
Mix all together and bake @ 350 in oven safe dish for around 15 minutes or until toothpick comes out clean (I used my toaster oven for this 😂) Top with fresh fruit and any nut butter for a tasty breakfast 😌

Bringing back my Mexican-inspired one-pot quinoa! 😋 It's full of spice & all things nice to get me back on track as I feel awful still 🤒
Here's what's in it:
🍅1/2 an onion
🍅1 tin of kidney beans
🍅1 tin of sweet corn
🍅1 cup of dry quinoa
🍅1 carton of passata
🍅1/2 cup water, or as necessary
🍅Soy sauce or tamari to taste
🍅Mexican spice mix, and/or
🍅Japanese curry powder, smokey paprika, turmeric, black pepper
🍅Freshly crushed garlic
Here's how to make it:
🍽Add onion to saucepan, you can add oil or fry in a little water. Add spices.
🍽Cut up carrots into small 1cm-ish cubes and add to pan, stirring every so often.
🍽Add more water to the pan, rinse kidney beans and sweet corn and add to pan.
🍽Add quinoa to pan, stir.
🍽Add entire carton of passata to pan, stir, then cover pan.
🍽Leave pan on low-medium heat for 30-45mins depending on the type of quinoa, checking every 10-15mins.
🍽After all liquid is absorbed, switch off heat. You can add more water here if anything is stuck to the pan.
🍽Add soy sauce to taste, or tamari if you want to keep it gluten-free like mine 😁
🍽Add garlic and serve.
When you eat it, you can add more spices, or vegan mayo or vegan cheese. It's also great inside stuffed peppers and can be frozen for meal prep as this makes about four servings. Enjoy! 😋🍽
