The day in London was so beautiful that this actually does not need a filter 🌻🌻 Super simple lunch of grilled haddock, broccoli, watercress and sweet potato wedges 🙌 Fish and seafood is super important in my diet. It's a source of protein I can easily digest - meat mostly just clogges me up (there was a time when my gut was so unwell I could only eat meat with digestive enzymes!). Vegan Buckwheat Flax baked pancakes 🥞 buckwheat has a lower GI and more nutrients than wheat, oat or most flours. Top with fruit rather than sweet syrup. Flax adds important omega-3s and replaces eggs. baking pancakes is a great hands free option!Although I do find pans are better for fluffier fat pancakes results. Recipe: 3tbs ground flax seed,5tbs water, 1/2 cup apple sauce unsweetened, 3/4 cup water, 1/2 cup buckwheat flour, 1tsp baking powder, 1/2 tsp cinnamon. Bake in oven at 375F for 15mins, no need to flip.

Honestly, I think pancakes are the best thing in the world. I get so excited just thinking about this morning's breakfast 😂😂 Today is one of my favourite days, the #Londonmarathon day. Takes me back to days when my body could do strenuous things like long distance running 😋 my doctor is adamant I should just be doing yoga to not kill my thyroid, but since my thyroid is bound to disappear anyway, I might as well do a half iron man or something 😎 you only live once after all! Yesterday was the perfect day for a forest walk. Not too hot, not too cold, no wind, no human noise, only birdsong. This plus good footwear and fitness made it very mindful and therapeutic. Of course we should all do this more but for me, if any of the above conditions aren't right, I spend most of the walk thinking about when it will end.
