Here are the Low Carb Blueberry Cinnamon Bun Muffins I made - and the recipe I used to make them. ❤
I used this recipe to make 9 larger muffins at just under 2.5 net carbs each, but you can make a dozen smaller muffins too. I think I used almost 1/3 batter per muffin, so 1/4 or a little less would work to make the dozen I think.

Ingredients: * 1/2 cup Blueberry Cinnamon Bun Almond Butter, room temperature * 4 Large Eggs * 2 TBSP Melted Butter or Coconut Oil * 1/4 Cup Almond Flour * 1 TBSP Sweetener * 1 tsp Baking Powder * 1 tsp Cinnamon * 1 tsp Vanilla * 1/4 tsp Salt ~ For the flavored nut butters I use these five flavors: TravelingLowCarb.com/legendary Our coupon code is: LOWCARBTRAVELER
Stir together the first three ingredients until smooth. Add the other ingredients. Mix well.
For pancakes, melt butter in a non stick skillet and cook over medium heat. For waffles, grease your waffle iron and cook until deep golden brown. For muffins, bake at 350 degrees for 10-15 minutes in a well-greased muffin tin (or with muffin papers), or cook longer if needed: until golden brown and a toothpick comes out clean.
You can use ANY kind of nut butter in this recipe. I’ve experimented with several myself. But the Legendary Foods flavored nut butters were definitely the best! Especially Apple Pie, Blueberry Cinnamon Bun and Pecan Pie almond butters.
Note: If you use a plain nut butter, you might want to add blueberries, unsweet chocolate chips, chopped nuts, etc to give them more flavor.

A feeling that always steals my joy is IF I make a small bit of progress is comparison. This is a habit of mine that I’m trying to break for myself. This feeling of not feeling as strong, skinny, or good as someone; brings unwanted feelings that cause a multitude of things for me, binge eating, not eating, and frustration. This is a very personal part of my journey that I usually wouldn’t share, but I want to be as transparent as possible on this page.
This is my journey that I’m grateful to be able to share, and potentially help other to start their journeys and get through trials like this. All I can say is to anyone feeling this.. this JOURNEY is not a race.. no one is further along than you are. This JOURNEY is all about what you can do to make changes for yourself and feel better everyday. If I can tell you anything, it’s too be cautious with your time spent on social media when on your journey.. it can be a motivator, but it can also hinder you.
Any strives or progress is something to celebrate, and spark new motivation.

Meals for today, and hopefully some ideas for some of you. Clocks in at 1800 calories and 52 net carbs... my sweet spot. And it feels like a chore eating all this... It’s a shit ton of food!
Being regimented like this always gets me my best results, and it’s really unfortunate I go off and on! I need be more consistent about planning them out in advance vs. eating as I go. I find these macros and planning get me the best results.
Here’s the run down:
BREAKFAST: 3 eggs, 1/2 avocado, some cheese. I cook this in the morning Sunny side up. 395 calories.
SNACK 1: Garlicky ground Turkey breast (5 oz) protein bites. 165 calories.
SNACK 2: Greek yogurt parfait with 1/2 cup Fage Greek yogurt, 1/2 cup blueberries, 1/4 cup walnuts. You’ll be amazed at how much this fills you up. 320 calories.
LUNCH: Shrimp, 1/2 cup brown rice, Mixed bell peppers, zucchini, and garlic. 300 calories.
SNACK 3: Peanut butter & Protein shake. 330 calories
DINNER: 7oz grilled Mahi Mahi with asparagus and little cherry peppers. Obviously accompanied by my grab & go Sriracha. 285 calories.

sad last day of this incredible meal prep. i marinated chicken thighs in chipotle/adobo and then cooked them in the oven while i sautéed diced cauliflower in butter and seasoning salt. divided the rice and chicken into 5 containers, and then packed separate containers each of salsa, sour cream, and a cabbage/red onion quick slaw. that way i can heat up the container in the office microwave and add all the fun toppings afterwards!
Intermittent fasting (IF) is ONE method for losing fat and getting leaner. Is it \"the best\" way? No, certainly not for everyone.
, I find it extremely appealing to me personally and very easy to follow. Like any diet, it doesn't work through some magical property only native to itself. It allows you to lose weight through a calorie deficit like any diet method, and when combined with resistance training, also maintain/build muscle to become more lean and toned.
Here are some of the benefits of it:
1. Easy to get in a calorie deficit because of time-restricted eating
2. Counting calories not necessary, but not a bad idea initially to get a good feel for how much to eat in the eating window. Calories still matter with IF.
3. Decreases insulin resistance
4. Increases human growth hormone (HGH) which is good for fat loss and improving body composition
5. Satisfying meals which help you feel like you're not dieting for the majority of the day once you get past the morning fast
6. Increased cellular repair
7. Colon cleansing> natural detox
