Our HIGH PROTEIN & LOW KCAL SALMON FISHCAKES have been a real hit! 😍🐟🍰 Tag a fish lover who’s going to make these for you this week! 😁📲👋🏼 . Ingredients (makes 4 servings): 500g salmon fillets (skin off) 1 stick of lemongrass (finely chopped) 1 inch of fresh ginger (peeled and finely chopped) 2 handfuls of fresh parsley (finely chopped) 50g green peas 2 teaspoons of chilli jam 1 tablespoon of oil Salt and pepper to taste . Directions: Chop the salmon into 1/2 inch chunks. Push 1/2 to the side and chop the other half until super fine, almost like a pure. Mix with chunkier bits. Season with salt and pepper to taste. Mash green peas a little using a fork and mix with salmon chopped lemongrass, ginger, parsley and green peas. Divide into 4 and then shape into thick patties Heat non-stick pan over medium heat with 1 tbsp. of oil. Cook the fishcakes for 2 minutes each side. Spoon the chilli jam over the fishcakes. Add a splash of water to the pan, turn the heat off and jiggle to coat. . @nescafe new iced coffees 👏🏻 I always tend to grab a pick me up in the shops, either sugar free red bull or a Starbucks cold coffee (often high in sugars) BUT I stumbled across these 👀😍 £1.00 on offer in @sainsburys so I grabbed both...the Americano I tried today and I’m one for black coffee so this suited be and was well worth the 23kcals for the can (192ml) I am yet to try the latte but again for 192ml only 98kcals!! Speedy salmon 🤤 this is one of my go to meals!! Working late and could literally eat the entire contents of the fridge! I throw in my salmon for 20-25mins, whilst that’s cooking I get the veggies going and then heat up some microwave rice! Throw it all into the pan, add some soy sauce and let it simmer! Winner Winner Chicken Dinner! 🏆😍 Try our CREAMY MUSTARD CHICKEN recipe - which is low in carbs & serves 4 (so can be great as lunch/dinner for tomorrow too! 🤓😇 . Ingredients (makes 4 servings): • 4 chicken breasts • 200g mixed mushrooms • 200g broccoli florets, trimmed • 1 red onion, chopped • 2 tsp wholegrain mustard • 100ml single cream • Salt and pepper to taste . Directions: 1.) Place non-stick frying pan on a medium heat. Place all mushrooms in the dry pan, tearing up any larger ones. Let them toast and dark gold. Remove from the pan. 2.) Heat 1 tbsp of oil. Season the chicken breast with salt and pepper. Sear the chicken for 4 minutes (flip and cook 2 mins on each side). 3.) Add onion, mushrooms and broccoli to the pan. Cook for 3 minutes, tossing often. Then add mustard, cream and 150ml water. Bring to boil, reduce heat and simmer for further 5 minutes. 4.) Season with salt and pepper to taste .
