I also threw together meatballs - I say threw together because I threw a bunch of shit into a bowl, rolled them into balls, baked them, and hoped for the best 😅 they turned out pretty good! I have a ton of sauce left over. I plan on making thighs and pairing that together! Noms. #itswhatsfordinner
Herb and Garlic seasoned sirloin and Asian inspired vegetable stir fry from Trader Joe’s. I just seasoned and started sautéing the veggies then added the beef and herb garlic packet and finished it all together.

Hospital food 😷 so glad I’m home and can eat real food! This was last nights dinner of over cooked steak, over cooked veggies, and rock hard mashed potato. I pretty much just ate the cauliflower soup and veggies cause the rest was inedible 😂

Monterey Chicken. This was so incredibly easy to make and was ready in 20 min. The kids, the husband and this Keto momma were happy.
In an oven safe skillet (I use an iron skillet) add 2Tbs olive oil and 1Tbs and warm. Add your chicken breasts to the skillet and cook until done. (About 5 min each side). I seasoned my breasts with Salt, Pepper and Garlic Powder.
Next, top each breast with 1Tbs Sugar Free BBQ sauce, cooked bacon strips and 1 slice of Colby jack cheese.
Place the entire skillet into the oven on Broil for 3-5 min or until cheese is melted and bubbly.

My focus this month has been on infrastructure. I'm setting up the people (eek I need to hire!), processes, & kinds of marketing that support scale + MEANINGFUL growth (aka I don't care about vanity likes or follows. Would literally rather have 5k FRIENDS vs 100k ghosts). I've been reading a lot, challenging myself w/lots of questions, & trying to get face time with accomplished entrepreneurs I look up to💡.
Yea it's scary & sometimes I don't know exactly what I'm doing, BUT I am obsessed with this process❤️ Like I said in the post from a couple days ago....if you just show signs of fight + life, the universe will show up for you too 😜👍

Breakfast with the FAM and I went for a plate of FAT. It was DELICIOUS 😋
Elk burgers with wild mushroom cauliflower “risotto” and green olives. The “risotto” was a mistake dish when I realized that the frozen mushrooms are giving out too much water and dumped them into the frozen cauliflower rice 😂 Then I was like, “Oh, this makes a wild mushroom risotto!” I love making mistakes in the kitchen, especially when they turn out delicious 😋

Keto Game is 💪🏻!! Blood sugars are in the 80’s again (same as a non diabetic), and I can’t believe I let myself slip back outta ketosis like that!! Lesson learned, but moving on...👊🏻 Not gonna beat myself up NO MO!!☝🏻
