🥥 Vegan Coconut Rice Pudding with Mangoe and Passion Fruit Coulis 🥥.
Made these #creamy #vegandesserts
a few days ago... they are so easy to make and a great treat for this 🌞 London weather. I was inspired by Chef John
. 1 tbsp of #coconutoil
. 250g of sushi rice or any short grain rice. . 1 can of full fat #coconutmilk
. 750 ml of #nondairy
milk I used #soyamilk
. 3 tbsp of castor sugar . . 1 tsp of #vanilla
. 2 ripe #mangoes
has a good one in their finest range. .1 tsp of #chinese5spice
COOKING METHOD: 30 MINS.
. Step 1: fry the rice in the coconut oil for 5 mins on a medium eat .
. Step 2: add the coconut milk and soya milk gradually until the rice is cooked and has absorbed all the liquid... this is a labour of love 💗 just like making a risotto ... this will take 20 mins .
. Step 3: add the vanilla and sugar and mix.Then put aside and let it cool down . . Step 4: chopped the mangoes and add the coulis and Chinese 5 spice, mix and set aside. - layer in glasses or ramekins . . Step 5: store in the fridge until cold... voila! .
The flavours of this desert takes me back home to the islands...the Seychelles 😊.
