I remember I used to really dislike having oatmeal for breakfast. I think it’s because I never knew how to spice it up. I used to HATE😖 bacon🥓, but now I enjoy it every morning and it tastes so good!😋🤤The beautiful thing about keto is that you can eat the same foods because they’re so damn good! 😜😭👍🏼This is my go to favorite: ham (sometimes bacon), scrambled eggs smothered with coconut oil as well as spinach, bell pepper, green onion, and onion, and garlic! All cooked in low heat. Delicious! I also smother some coconut oil with my meats to boost up my fat intake. I love eating my breakfast with half an avocado and an herbal tea, mainly ginger and peppermint. Which have great detoxifying effects. It’s also great for a candid gut (carb and sugar sensitivity). dinner tonight was SO good! i've never made this before but i literally just threw a bunch of things together and it turned out incredible. first i browned @traderjoes
organic free-range italian chicken sausage, then added in mushrooms, onion, pearl tomatoes and roasted red pepper. lastly i added some roasted garlic marinara sauce (some people say it's compliant some don't but i'm not strict on it) and there ya go!!! tomorrow i'm going to eat the leftovers with spaghetti squash. PS i never cooked/experimented with food until last year and it's insane how much i love it now! if i'm not grabbing something out to eat i usually spend 1-2 hours cooking everyday, just because i really enjoy it! cooking shouldn't be a chore- it should be a hobby

well I had carls Jr and a diet pop (yes yes i know pop is bad lol) veggies with cheese cream cheese and some very low carb hot dogs with mozzarella. Didn't weigh this week I'm feeling kind nervous because I been eating to much I think so I'm tackling that this week and weigh next Friday!

When chipotle under fills your bowl and it's your first meal after a 45 hour fast 😢😣 I'm kidding mostly, my eyes were bigger than my stomach. Chose chipotle cause if I went to the grocery store by my work I would have bought way too much food and ended up over eating which was not my plan!! Ended up going for 45 hours because I felt good and well, just felt like it 😛

I cooked the ribs in the Instant Pot for 60 minutes. Once again it nailed the doneness; perfectly tender, fall off the bone and juicy. I'm amazed everytime I use it to cook something that would normally need to braise for hours and it comes out perfect in such a short time.
I tossed the cauliflower in some olive oil and salt n pepper and roasted it for 25 minutes. Once it was cooked I put it in my blender with some butter and pureed it until smooth. I mixed in some bacon and then topped it with a bit of Parmesan Cheese and some more bacon and browned it up in the oven. If you ever make mashed cauliflower I highly recommend roasting it instead of boiling or steaming. That way you get no extra moisture and it turns out nice and thick, not watery.

Dinner tonight was to die for! Cauliflower Rice Stuffed Peppers. It's not 100% keto because I shredded a carrot in the filling, but for 5 servings, I figured, it was only one extra net carb per serving. - I started by cooking some (1.5 lbs) ground beef in coconut oil (bacon fat would've tasted way better). - I added a chopped onion and a shredded carrot. When it's almost cooked, add garlic salt, pepper and chopped parsley (optional)
- add a can of low carb tomato sauce and reduce to medium heat for 5 min.
- mix in caulflower rice and set aside. - stuff cored and cleaned out bell peppers with the filling
- place standing up in a glass baking dish and add some tomato juice at the bottom.
- cover with foil and cook on 350 for 1.5 hours. Take the foil off the last 15 min.
- serve with sour cream
Post workout dinner. More chuck eye steaks! 🐄🐄🐄
