Keto Lasagna 🤗🤗🤗 if you haven't tried lasagna with fathead dough cut into "noodles" you are missing out. This was hands down the best keto meal I have ever prepared. My sister isn't shy about telling me if my keto recipe is disgusting and she approved enough to get 2nds! It was a hit. Basically just your regular lasagna, with low carb "noodles" and sauce. 🤗 so good! I have an insane amount of leftovers I'll be sending to my parents house tomorrow! Keto Friendly Chicken Wontons. I know this isn't the best photo, but these were sooo good I'm going to share anyway 😁 These are as close to the real thing as I remember. For mine, I put them in the air fryer for 5 minutes after I baked them to really crisp them up!. Recipe ⬇️⬇️
Keto Chicken Wontons
Makes about 16 wontons
1 ½ cup shredded mozzarella cheese
¾ cup blanched almond flour
1 oz cream cheese
1 tsp garlic powder
¼ tsp xanthan gum
Pinch of salt
½ lb ground chicken (beef or pork can be used here too)
½ tbs freshly grated ginger
2 cloves garlic, finely chopped
¼ onion, finely chopped
1 tbs chopped scallion
2 tbs erythritol
1 tbs toasted sesame oil
1 tbs low sodium soy sauce
Salt and Pepper to taste
Red Peppers flakes, to taste
1. Combine all of the filling ingredients in a medium bowl, set aside.
2. Pre heat the oven to 400 F. Line a baking sheet with parchment paper.
3. In a microwavable safe bowl, combine the almond flour and mozzarella cheese. Add the cream cheese in chunks on top.
4. Microwave for 1 minute, stir and then heat for an additional 30 seconds.
5. Add the salt and garlic powder and mix until combined.
6. Add the egg (don’t mix yet!) and sprinkle the xanthan gum over top. Mix.
7. Between 2 sheets of parchment paper, roll out the dough as thin as possible before it starts to tear.
8. Cut into 16 equal squares. Put about ½ tbs of filling into each square and then pinch all 4 corners together. Continue with the rest of the squares.
9.Bake for about 15 minutes or until the internal temperature is 165 F.

I was about 15 years old here and I weighed almost 160 lbs if I remember correctly. So I was just a little overweight, and 3 years later I fell under the category of obese and continued to gain.
