YUMMM! Mmmade these for lunch today. Soooo good...so easy! Mmmmake!
Ingredients for the RAW NUT “MEAT”;
1 cup walnuts
1 cup mushrooms
1 tablespoon coconut aminos or tamari
2 teaspoons cumin
1/8 teaspoon cayenne
Ingredients for the CILANTRO LIME “SOUR CREAM”;
1/2 cup cashews
1/4 cup water, give or take
1 small lime, squeezed
1 teaspoon apple cider vinegar
1 clove garlic
few sprigs cilantro
pinch of sea salt
Ingredients for my special GUACAMOLE;
1 large avocado
juice of half a lime, or more
1 tablespoon onion powder, or to taste(I like a lot!)
garlic powder, to taste
sea salt, to taste
Make the Taco Nut Meat. Place the ingredients in your food processor and pulse until coarse and chunky. Don’t over blend or it will become a nut butter! Set aside. Make the guac. You can use your own recipe, but I love my special recipe. Onion powder is my secret weapon. It makes the guac tase smokey and a lil sweet...like an onion that has been warmed by the sun...mmm. Set aside. Make the Cilantro Sour Cream. Add the ingredients to your food processor and blend until smooooth. Add extra water 1 tablespoon at a time, if needed. For thicker cream use less water, for thinner use more. This stuff is SO YUMMMY! Put the guac into the avocado shell (or a bowl, if you prefer) Put a generous amount of the taco nut meat on top, and drizzle with the Cilantro Sour Cream. Expectations V’s Reality.
My daughter always loves creating shapes with her body whist challenging me to try them so she can caption them ‘expectations v’s reality’.
And let’s face it, I love the challenge and being a big kid is A LOT of fun.
However it’s not so much fun when you fail on a cliff face.
And even less fun being ‘caught’ by a protruding palm tree on the way down.
In a bikini none the less 🙄.
The silver lining according to my daughter is that the gauges and grazes from my shoulders to my ankles makes me look ‘badass’.
I’m not sure it helps, but badass will do, and yes I will continue hanging out with her and accepting her challenges - next time how ever I may wrap myself in padding... just to be sure 😳❤️😂

An amazing 14km trail run starting at Gerringong and winding its way north to Kiama. Plenty of hills with a helpful tailwind. Kicked some very big goals today, validated alot of things during the race primarily that my diet and my training methods are effective and are really starting to pay off. The young fella also ran today. He did the shorter distance and finished 2nd overall!!!!!!!! Definitely a proud dad moment.
Went for a meal last night to celebrate my pappy’s birthday at Gate of India in Morley. The food was fabulous and to top it off they even had 2 dedicated Keto/Atkins options on the menu!! I was a happy bunny!! Starter: Paneer Tikka

Wenn es um Eis geht dann ist Schokolade sowieso der King. Ich kenne niemanden, der Schokoeis nicht mag. We had a busy day at the water park and were too tired to cook dinner so we stopped by Taco Casa. I had a taco salad without beans and added extra meat, cheese, sour cream and olives. I ate every bit, except the taco shell. So good! 🌮👍🏻
