If you haven’t seen my story from last night, I whipped up some roast belly pork bao for dinner using @unitedfoodco
bao buns. Super easy, fast, soft and just incredibly yummy buns. Available from selected supermarkets in the freezer aisle. This one had roast belly pork, salad greens, chilli, coriander, apple slaw, fried shallot and sweet soy drizzle. Can’t wait to try other combos!

Many things can play into that, health history, allergies, goals, budget, but one thing is for sure IT SHOULD BE REAL FOOD! Dairy free cheese sauce- for all your favourite cheesy dishes...except without the cheese! 🙊 since Axel has been dairy free I’ve had to find new ways to make his fave foods using dairy free options. I didn’t realise it would be this easy!
Things like lasagne, pasta bake, sauce over broccoli other veggies, and loads more I substitute with this and you wouldn’t know the difference! I’m so grateful for the JBT program as all the recipes are dairy, gluten and refined sugar free but never lack in taste!
Method: steam or boil cauliflower until tender. Blend with remaining ingredients until smooth. Season to taste.
Mix it up Tips:
👉Add flavours to your tastes
👉Add garlic and onion powder
👉Add fresh herbs, spices or chilli
👉Squeeze of lemon to bring out flavours 👉White miso can substitute nutritional yeast 👉works well with soaked cashews in place of cauliflower - just add water to desired consistency when blending

Do you ever think about your journey with autoimmune disease as a before and after? For me, my life feels so radically different as I’ve gone through my own healing process. To look back on it now it feels like a metamorphosis coming into my true self but at the time it felt like torture. ✨
Before I started really developing symptoms I taught group fitness classes up to five times a week. Kickboxing, body pump, HIIT – the more intense the better. I LOVED to move, and I loved being known as someone who was fit and strong. It was a part of my identity. As someone with arthritis, this love of mine turned into one of my biggest triggers and I had to say goodbye to that part of my life. ✨
Learning to slow down has humbled me and taught me so many lessons. I’m not invincible and that’s okay. It’s okay to take breaks, to move at your own place, to choose a different pose than what everyone else is doing. It’s okay to let go of an identity that’s no longer serving you and it’s okay to find something new to love. We are constantly evolving and it’s incredible the beauty that can come out of what feels like a dark time. ✨
If I had never learned to slow down, I wouldn’t have fell in love with my yoga practice or learned a walk in the neighborhood brings me the same mental clarity of an intense gym session. It sometimes makes me sad that people who meet me know will never really know that part of me and it’s okay to feel sad about that, but it’s just one part of my story. I love this person that I am now, autoimmune disease and all. ✨

Posting a bit late but this was my lunch today. Mango salsa with cucumber, cilantro and lettuce from MY GARDEN 😍.
I didn’t measure and it’s not really necessary with this kind of recipe but roughly it’s 2 mangos, 3 tomatoes, 2 cloves of garlic, 1 bunch of cilantro and 4 celery stalks. I just chopped everything and tossed it with a little sea salt and served it on romaine lettuce leaves.
Summer is the time to eat as much fresh raw fruits and veggies as possible because most of them are in season and local so you’re getting alllll the nutrients to heal your body, mind and spirit.

My beloved and neglected rice paper rolls. I thought I’d never say this, but I think I overdid them this past summer and they’re hardly on rotation anymore and not hitting the spot like they used too. Anyone else in a food rut?
People often notice my china cabinet in stories & pictures so I thought I would legit explain it!
Okinawa housing is TINY! As a Navy family we are authorized to bring over 25% of our weight allowance for our household goods. (Like: BARE ESSENTIALS.) We brought even less- the military stores the rest back in the states for us! This cabinet (and almost all of our furniture) is government loaner furniture! Since we don’t have much storage, I use our China cabinet as a pantry for sauces, ghee, fizzy waters, bottled water, and snacks 🤣🤣🤣 The bottom actually has dishes & serving stuff, but the top is pantry goods.

🧘♀️🧘🧘♀️ My sister turned me on to guided meditation. I just pop in my headphones and lay in my bed and focus on the words of the guide. Sometimes it only lasts 10 min, and sometimes I fall asleep, but I always feel better and more grounded afterwards. ..
My personal favorite is Mary Maddox's podcast Meditation Oasis. Mary's voice is soothing and calm and I always feel better when I'm done. She has great wake up and sleep ones that are easier to sneak in when you are busy. .. ♥️🌌♥️
