☀️ Summer Couscous ☀️ adapted from @skinnytaste
to our preferences.
So fresh, healthy & delicious! Eat it as a side dish or dinner. Add grilled chicken, change the veggies or use garden herbs - this can be changed to your personal preference. 🍋🍃🍅
1 box couscous
Asparagus, cut into pieces or chosen veggie
Grape tomatoes, quartered
1/4+2 tbsp red onion, diced
1 lemon’s juice
1-2 tbsp dried Italian seasoning or fresh herbs of choice
S&P, pleeeeenty of pepper please!
☀️ Boil water. Add asparagus & boil just until soft. Rinse with cold water to keep that green color bright!
☀️ Use the same pot & make couscous following package directions.
☀️ While the couscous boils, chop tomatoes & onion.
☀️ Add veggies, seasoning, S&P, lemon juice & a dribble of olive oil to the cooked couscous.
☀️ Serve at room temperature or chilled.

It’s been hard with all the traveling, lack of sleep and not eating my normal foods that I eat at home. But I’ve made sure to drink my superfood shake everyday and I’m thankful for something that’s giving me some exercise, helping with my digestion and helping me get the nutrients that I need.

Sunday breakfast calls for Banana French Toast! My toddler LOVES these (and so do I)! They are healthy, quick and simply to make🙌⠀I also save leftovers for morning or afternoon tea👍
1 large banana (smooshed)⠀
1 egg (lightly whisked)⠀
2 tablespoons of milk⠀
Pinch of cinnamon ⠀
Small splash vanilla extract ⠀
4 pieces wholemeal bread⠀
1 teaspoon butter (possibly more as you go)⠀
- mix together banana, egg, milk, cinnamon and vanilla ⠀
- heat butter in a non stick frypan⠀
- dip a piece of bread into the banana/egg mixture (use a fork to help press the bits of banana onto the bread) ⠀
- transfer bread to the pan and cook both sides ⠀

Being Healthy Isn't Just About Eating Right💯. Can I get an amen💛?
I personally think the key to living healthy is keeping your long term goal in mind. I eat nutritious foods and follow a healthy lifestyle in order to feel my best.
I don't think you should react to every little misstep you make, but you also can't let bad habits carry on for too long either. Right? Be sure to take some time on a regular basis to evaluate how you've been living and whether you could be healthier with some small changes. Sometimes the smallest changes make the biggest difference.
Just bringing awareness and a open dialog with yourself is the best thing you can do. Your diet doesn't have to include counting calories but you should get to know your bodies needs and acknowledge how you feel when you eat more or less than your body needs. Etc. Intuitive is key! Not the number on the scale.
As important as eating right and exercising are, never miss a party, a vacation or time spent with family just to make you are following your diet/exercise regimen. I used to miss parties and time with the people I loved because I was too worried about gaining weight. Let me tell you this, I didn’t enjoy life!

This is my struggle, yes my belly pooches out at times, when I eat different foods that don’t agree with me like bread, dairy, gluten or who knows, my stomach just reacts , in fact, it gets downright hard like a rock and most times painful

How many times have you fallen off track and “started over”? I used to do that all the time. I used to think I had to be 100% perfect on a plan. If I wasn’t perfect, I’d just totally give up. Then, get tired of being miserable, and set a new date to start over. It was a viscous cycle. But, I don’t think that way any more. You know why? Because this is lifestyle and it’s a journey not a destination. It’s about balance and focusing on being healthy for you mind, body, and soul. It’s about fueling your body with what it needs and being strong enough to do anything you set your mind to. My next accountability group starts July 16 with “prep week” the week before! Let’s get you set up and ready to go. It’s never to late say YES to living your best life.

These posts are originally from my Facebook account. I love the abundance of nutrition and training public posts on Instagram so I've decided to share mine too.
Working out and eating healthily have always been my lifestyle. I've been in the same weight range and clothes size since hitting puberty. But in 2015, I put on 30kg during pregnancy although I kept up with my regular workouts and healthy eating. It was probably due to my hormonal changes and gestational diabetes that I packed on so much.
Was I miserable? I was a little disturbed at first but just accepted it coz I wanted to enjoy my pregnancy. I even found it funny when my hubby kept calling me Happy Hippo coz come on, I know I will get me back.😉 Getting back to me was a question of patience, consistency and a goal - to regain my agility, strength and stamina by summer of 2016. The main setback was being diagnosed with an arthritic left knee 4 months after giving birth so I couldn't run but I kept up by modifying my training.
It felt darn good to regain the agility, strength and stamina again since the summer of 2016. All of which is not possible if I didn't have a man who understood the importance of fitness like I do.
I like maintaining an overall healthy lifestyle for both mind and body. I believe a fit body is created through cultivating lifestyle habits, not workout or diet fads. Everyone is different so it is important to listen to one's body.
