I like to have a pantry clean out every few months, where I force myself to get creative with the ingredients I have.
So that’s where this guy came from- all the bits & pieces I already had bundled with a large helping of fresh goodness 😁🌱
The kids and I devoured these burgers, but I’m not gonna lie, my husband was not a fan 😬 In the burgers defense I did text him during the day to say I was making burgers for dinner, and I maaaaaay Not have mentioned they were veggie. So when he got home from work late, hungry as usual, he maaaaaay have been a little under whelmed with them 😂 due to not finding a big lump of meat in there and all, but hey ya win some ya loose some 🤷🏼♀️
— The-Oh-My-Goodness-Veggie-Burger —
- 1 small sweet potato
- 1/2 cup quinoa
- 150g canned chick peas, drained and rinsed
- 1/2 cup frozen peas, thawed
- 125g can of corn, drained and rinsed
- 1/4 cup chopped parsley
- 1/4 cup chopped spring onions
- 1/2 tablespoon curry powder
- 1/2 teaspoon ground paprika
- 1/2 garlic clove, crushed
- 1/2 teaspoon ground cumin
- Pinch of salt
Peel, cut and steam sweet potato until soft (around 10 minutes). Meanwhile in another saucepan, boil quinoa in 1.5 cups of water with the lid on until tender (also around 10 minutes) drain any excess liquid. Set both aside to cool.
Pre heat the oven to 180c.
Add all ingredients to the food processor and blitz for a few minutes until combined. With clean wet hands, scoop, roll and flatten 6 even patties and place onto a baking tray lined with baking paper. Note the mixture should be quite wet and sticky 👍🏼. Bake in a 180c oven for 30-40 minutes or until nice and brown. Layer into a wholemeal bun with fresh ingredients, Enjoy!

FUSION TACO NIGHT 🌮 I wanted some spicy kick tonight for dinner and I got exactly that. Feed what your body wants! Here I have some white corn tacos filled with grilled green peppers, caramelized onions, sautéed kimchi and mashed chickpeas. La 1ra vez que entré a un box de Crossfit, vi una llanta de camión, una cuerda colgando del techo y ni una sola máquina de gimnasio. No tenía idea que iba a hacer en ese lugar🤷🏻♀️
Me llamaba mucho la atención ver chicas tan fuertes levantando barras pero siempre encontraba alguna excusa para no hacerlo porque en el fondo pensaba que eso de levantar peso no era para una flaca como yo. Nunca me imaginé que este cuerpo con menos de 110 libras y una contextura delgada podría ser tan fuerte!
Cuando inicié, no me separé del tubo PVC por mucho tiempo y cuando por fin me animé a cambiarlo por una barra, el peso fue subiendo poco a poco. De 5 en 5 lbs. De 10 en 10 lbs. Lento pero seguro.
Ahora, mantengo una contextura delgada, no tengo un cuerpo de revista fit pero soy fuerte, rápida, ágil, resistente.
Todavía me susurra el "no puedo" al oído pero con el tiempo he llegado a opacarlo con los gritos de mi coach y la gente que me apoya.
Que lindo es el crossfit. No soy la mejor, pero trabajo duro para ser mejor que ayer, un día a la vez ☺️❤️

•••Dinner! This is one-pot taco pasta. 🌮 mmm This dish is beefy, cheesy, warm and super filling! To make this just brown up some veggie crumbles in a large skillet, (we love Boca brand) add 3-4 tablespoons of taco seasoning, then add 2 cups water, 1 cup salsa, and 8 oz of rotini noodles to your skillet. Bring this to a boil, then cover and turn it down to a simmer for about 10-15 minutes. Once noodles are soft, turn off heat and add a handful of your favorite cheese (we used @daiyafoods
) Finally scoop some up into a bowl and add your favorite toppings. We added avocado, tomato, and green onion. 🤤.

Creo que de las frustraciones más comunes que me comparten es que se les acaban las ideas para cenar! Que durante la mañana y medio día van súper bien con su alimentación, pero llega la cena y entre que están cansadas y no quieren hacer algo difícil, se les cierra un poquito el mundo 😄
Y créanme, A MI TMB!😅 Así que aquí les paso algunos tips que les pueden ayudar a triunfar con las cenas saludables y deliciosas 💪🏻
• Siempre ten pre-hecha alguna proteína como pescado o pollo. Puedes literal ya dejarla cocinada desde medio día o dejarla descongelando para cocinar en 5 min.
• Tener la verdura desinfectada es lo máximo, así ya nada más ensamblas tú platillo!🤟🏻
• Una vinagreta que te ENCANTE y saque de apuros no puede faltar en el refrigerador, eso le dará mucho más sabor a tu cena y cualquier ensalada te va a quedar deli💖

I love watercress. I grew up only eating watercress: one way, boil with ginger and ground pork. Though it's so delicious, I wanted to make it in a more creative way. That's the fun part about cooking that I am slowly falling in love with. This soup is good hot or cold, it's creamy, peppery and nutriously easy to enjoy.
• 1 bunch of watercress
• handful of kale (or spinach)
• 1 small onion
• avocado oil
Sautee the onions in a pot before it caramelizes. Add hot or warm water. Once it boils, add watercress and kale. Cook for about 5 mins, add S&P. Then use a high speed blender and blend until smooth. All done!

Butterfly a chicken breast, spread a layer on the inside of the breast, add sun dried tomatoes and a slice of mozzarella, season with salt/pepper, and grill for about 8 minutes on each side! We also made a balsamic reduction (boiling down balsamic vinegar) and topped the chicken with it! One breast has 38g of protein, 10g of Carbohydrates, and 400 calories. This is a nutrient dense dish that’s perfect for a summer day! What way do you do caprese?

🤗 texture: as I’ve said before, these protein doughnuts aren’t the same texture as real doughnuts. That isn’t bad, they’re just different! A bit heartier & breadier which I actually like 👌🏻 the glaze is perfectly thick enough to cover the treat nicely plus the crunch of the cereal 🙌🏻
😛 taste: this glaze is quite sweet and does taste like fruity pebbles! I liked but didn’t love how the flavor came across or it was too sweet for me...or maybe I just don’t love the taste of fruity pebbles 🤷🏼♀️
🤔 would you do it again? While it wasn’t my favorite flavor from @doughbardoughnuts
, it wasn’t bad. I’d definitely eat it again and thought it was a pretty good representation of fruity pebbles, so this gets a 7/10! 👍🏻 my personal favorite flavors of this brand are their chocolatey ones!

Have any of you ever had sweet potato noodles???? If the answer is no, you're missing out!
Bought some sp noodles at the Korean market and whipped up this teriyaki style noodle dish with lots of veg and pasture-raised eggs.
You can watch me make it on my stories, but here'a a quick recap.
Cook sp noodles in boiling water, rinse with cold water.
Scramble eggs in hot @chosenfoods
avo oil and put them aside.
Then cook veg (I used broccoli, purple cabbage, green and wax beans, bell pepper, shitake 🍄) with @chosenfoods
🥑 oil, add @bigtreefarmsbali
coco aminos, toasted sesame oil, raw honey, ginger, and some garlic (optional). Then add noodles and some more coco aminos, sesame oil, and salt to taste.
YUMMY! Honestly so so good. The noodles are very good cold as well. They are glassy, chewy, and oh so satisfying!!!! #bowlsbyjoey
