GF fried fish topped with jalapeno cilantro sauce and a side of garlicky buttered brussel sprouts👌 This is what I made for #dinner
and everyone loved it🤣💕💕
This is how I made the fish:
I dipped the fish in organic egg then dipped it in GF flour. Finally covered fish in the GF crumbs shown in picture. I seasoned the crumbs. Fried in olive oil.
The sauce has the following:
Fresh cut jalapeno & cilantro. Garlic, lime and mayo. Don't add too much lime or it will be runny.
Brussel sprouts were cooked in butter with garlic salt & pepper.
Waking up early becomes easier, and dare we say, enjoyable, when it’s accompanied by a fluffy mushroom and shaved brussel sprout frittata! 🍳Making a frittata over the weekend has become a staple. It’s such a versatile dish and so easy to grab a slice for an effortlessly satisfying meal. Simply pair with a leafy greens and avocado for a light lunch, or compliment with whole grain toast and berries for a filling breakfast. 🥗🥑🍓There are endless ways to enjoy this baked egg dish! Recipe below 😊⠀
Preheat oven to 350 degrees F. Wash and roughly chop 8 oz baby bella crimini mushrooms. In a medium sauté pan over medium heat, add a touch of olive oil and chopped mushrooms. Sautéed for about 5 minutes, then add 2 cups shredded Brussels sprouts (buy pre-sliced for convenience! @traderjoes
) and 2 tsp minced garlic. Sauté for 3-5 minutes. While veggies are cooking, combine and whisk 8 eggs, 1/2 cup almond milk, 1 heaping tsp oregano, 1/4 tsp salt, 1/4 tsp pepper, and 1/4 cup nutritional yeast (or shredded cheddar cheese). Add mixture to pan and make sure it is evenly coating veggies. Let sit for 10 minutes over medium heat, then transfer to the oven to finish cooking. Cook for 10-15 minutes, until top is lightly golden. Let sit for at least 10 minute, then slice and enjoy!!⠀

It was a burger and fries kinda night. 🤤 Was planning on making turkey burgers but organic grass finished ground beef was on sale at Whole Foods and I couldn't resist!
Tip: always go for grass finished beef when possible, meaning the cow was never fed grains as opposed to grass fed which was most likely fed grains at some point or butchered before it reached maturity. Grass finished beef also has less cholesterol and more omega-3 and antioxidants! 🐮
