For Luna's breakfast I made baked mini porridge squares. I used oats, Alpro growing up milk, cinnamon, 100% peanut butter, tahini, flaxseed, soaked chia seeds and coconut oil.
She also had an Organix gingerbread person, raisins, raspberries, mango, blueberries and pear.

This looks like a simple breakfast today but there’s a lot going on beneath the surface!
It’s grated apple and sultana porridge cooked in soya and cashew milk and topped with @wholeearthfoods
smooth hi-oleic peanut butter (does anyone else love the first scoop out of a new jar? Yum!) and I also had a new cinnamon which is why there’s a bit of a cinnamon explosion on the top 😂. This was so delicious though.
Review on the peanut butter: I really think you can taste the difference of the hi-oleic peanuts. It’s just delicious and apparently it’s better for you. So a win win. I highly recommend getting this!
Another late night cooking. I just got this idea to make my own tartar sauce since I made a big batch of mayo the other night. Then thought about how good a pan seared salmon would go well with arugula. THEN I COULDNT STOP!!! Roasted squash from the garden w/ baby heirloom tomatoes and chopped up cucumbers with roasted macadamia nuts for that good crunch. I should’ve stopped at the homemade tartar sauce. Lunch tomorrow should be good since I’m not breaking my fast. I know, I got issues. I’ll head to bed now🤷🏻♀️
Following on from my herb/spice basket post I thought I’d prove my point by taking two basic & bland ingredients and making a tasty meal.
I started with ‘skin on’ chicken breasts from @irvines_butchery_bangor
(the skin helps retain moisture and adds a touch of healthy fat) and a humble cauliflower.
The chicken went into the bottom of my crock pot, got covered in a layer of chopped scallions that I’d found looking forlorn in the salad drawer of my fridge, and those got topped with the cauliflower.
In a bowl I mixed the solid part of a tin of coconut milk, about 2tbsps of almond & coconut butter by @pipandnut
, a few cloves of crushed garlic, a chopped chilli, a generous grind of Himalayan pink sea salt & black pepper, a tbsp of tandoori powder, and a tsp each of coriander, cumin, ginger & garam masala.
It all got a good stir to combine and then I poured it into the crock pot, adding a handful of cashews and a handful of unsweetened cranberries.
I cooked it on low for about 7hrs and, whilst not particularly pretty, this had to be one of the best curries I’ve made.
Served here with potato salad from the farm shop because #resistantstarch
(& because I’m eating a lot less starchy veg than usual at the moment so too much of a faff to make my own) this has been my favourite meal of the week so far.

Back in it! I had zero motivation to go to the gym today.. First, because the last couple of days have been scorching hot and my home turns into a sweat box, so I have been absolutely drained by the end of the day! Second, because I just started with a new gym and I knew that I was going in blind. No idea how the space was set up or what kind of machines they have, and no idea how busy it would be while I was trying to figure my shit out!
BUT. I went anyways. Mostly because my hubby said I should go because I've been saying I'm going to for the past 4 days. And I'm glad I did! It took a minute or two to read the directions on each machine, but most of them I was already familiar with! It was also way busier than I'm used to (with a MUCH different crowd 😂🏋️♀️), but I found that pushed me to work a little harder! I don't think I've ever sweat that much from strength training! 💪💪💦
How to make a 7-layer dip healthy AF: leave out the inflammatory dairy and carcinogenic chemicals that I can't pronounce then add brain-boosting, heart-healthy omegas, and antioxidant-rich veggies. 🥗
