On tonight’s menu is ~ Pan fried salmon in avocado oil ~ Pan fried Brussel sprout in lemon and avocado oil ~ Infused lemon sweet potato mash I usually use coconut oil for frying at high heat until I came across avocado oil. I must say this oil is tasty, fruity and I prefer it much better than olive oil and coconut for my meals. It’s ’ a very healthy cooking oil, with an extremely beneficial fatty acid profile, good levels of antioxidants and other healthy compounds. Well chuffed with this definitely #progressintherightdirection considering since last weigh in I had a networking day away with work with lunch and a few ciders and a take away, pizza on Sunday (gf) yesterday was someone it's works birthday so I had a little piece of cake (genuinely small) I had said no (go me) but I caved when everyone else had a piece. Want an easy, light dinner to add your nutrition routine? 😋 This combo I made on the weekend was delicious & full of flavor. There’s a lot you can do by adding garlic, sea salt & pepper to the mix. Instructions below: . What you need: 4oz wild caught salmon 1 medium zucchini  1 tbsp pesto Handful of asparagus 1 cup mushrooms 1 cup cherry tomatoes 1 tsp olive oil garlic Sea salt Pepper . What to do: Step 1 - Spiralize the zucchini (I love the Paderno brand spiralizer) Step 2 - Chop up the mushrooms, tomatoes & asparagus. Step 3 - Spray a pan with non-toxic olive oil spray & cook the salmon stove-top (I like to cover the pan so it cooks more evenly). Step 4 - In a separate stove-top pan, add 1 tsp olive oil & garlic to pan. Add the mushrooms, tomatoes & asparagus. Sauté with sea salt & pepper. Cook until mushrooms are soft. Step 5 - Once the salmon is cooked through (becomes soft and flaky), remove from the stove. Step 6 - Spray a clean pan with non-toxic olive oil spray. Cook the spiralized zucchini with the pesto for a short time (you don’t want it to become too soft) Step 7 - Plate & Enjoy! . . This looks like a simple breakfast today but there’s a lot going on beneath the surface! It’s grated apple and sultana porridge cooked in soya and cashew milk and topped with @wholeearthfoods smooth hi-oleic peanut butter (does anyone else love the first scoop out of a new jar? Yum!) and I also had a new cinnamon which is why there’s a bit of a cinnamon explosion on the top 😂. This was so delicious though. Review on the peanut butter: I really think you can taste the difference of the hi-oleic peanuts. It’s just delicious and apparently it’s better for you. So a win win. I highly recommend getting this!
Another late night cooking. I just got this idea to make my own tartar sauce since I made a big batch of mayo the other night. Then thought about how good a pan seared salmon would go well with arugula. THEN I COULDNT STOP!!! Roasted squash from the garden w/ baby heirloom tomatoes and chopped up cucumbers with roasted macadamia nuts for that good crunch. I should’ve stopped at the homemade tartar sauce. Lunch tomorrow should be good since I’m not breaking my fast. I know, I got issues. I’ll head to bed now🤷🏻‍♀️

Following on from my herb/spice basket post I thought I’d prove my point by taking two basic & bland ingredients and making a tasty meal. ~ I started with ‘skin on’ chicken breasts from @irvines_butchery_bangor (the skin helps retain moisture and adds a touch of healthy fat) and a humble cauliflower. ~ The chicken went into the bottom of my crock pot, got covered in a layer of chopped scallions that I’d found looking forlorn in the salad drawer of my fridge, and those got topped with the cauliflower. ~ In a bowl I mixed the solid part of a tin of coconut milk, about 2tbsps of almond & coconut butter by @pipandnut , a few cloves of crushed garlic, a chopped chilli, a generous grind of Himalayan pink sea salt & black pepper, a tbsp of tandoori powder, and a tsp each of coriander, cumin, ginger & garam masala. ~ It all got a good stir to combine and then I poured it into the crock pot, adding a handful of cashews and a handful of unsweetened cranberries. ~ I cooked it on low for about 7hrs and, whilst not particularly pretty, this had to be one of the best curries I’ve made. ~ Served here with potato salad from the farm shop because #resistantstarch (& because I’m eating a lot less starchy veg than usual at the moment so too much of a faff to make my own) this has been my favourite meal of the week so far. ~ Turn #blandintogrand with just 5-10mins prep time 👊 ~ #juliesays #9wholebites #bodysuccess #intuitiveeating #eattherainbow #jerf #guthealth #hearthealth #brainhealth #healthyfats #holisticnutrition #fatisyourfriend #nourish #foodismedicine #youarewhatyoueat #wholefoods #antiinflammatory #sugarsucks #healthylifestyle #paleo #primal #keto #bangorbythesea #whole30certifiedcoach #certifiednutritionist #whole30 #whole30uk

Back in it! I had zero motivation to go to the gym today.. First, because the last couple of days have been scorching hot and my home turns into a sweat box, so I have been absolutely drained by the end of the day! Second, because I just started with a new gym and I knew that I was going in blind. No idea how the space was set up or what kind of machines they have, and no idea how busy it would be while I was trying to figure my shit out! BUT. I went anyways. Mostly because my hubby said I should go because I've been saying I'm going to for the past 4 days. And I'm glad I did! It took a minute or two to read the directions on each machine, but most of them I was already familiar with! It was also way busier than I'm used to (with a MUCH different crowd 😂🏋️‍♀️), but I found that pushed me to work a little harder! I don't think I've ever sweat that much from strength training! 💪💪💦
