Waffle Weekend! I’ve made it my mission to come up with a formula for Easy Vegan Protein Waffles that whips up quickly and serves a large crew of family + friends. I’ve tried all kinds of flours, including spelt, whole wheat pastry, #paleo
1:1 flour blends, and they all work here, as do many different vanilla #plantprotein
blends. Yes, the flour and protein powder you use will affect the taste, so choose your favorites and give it a try! Please tag me if you do ~ I’d love to hear what you think. Now here’s the loose formula...and cheers to the weekend! Xx .
2 cups flour of choice
1 tsp xanthum gum if using gluten free or paleo flour
1/2 cup vanilla plant protein powder
Pinch sea salt
1 Tbsp baking powder
2 Tbsp oil
2 1/2 cups plant milk
2 Tbsp maple syrup
Mix all ingredients together in a large bowl and let sit while your waffle iron warms up. When your waffle iron is ready, cook according to directions. If you use a heaping 1/2 cup of batter for each waffle you will get 10 waffles! Top with your favorite fruits, seeds, yogurts, and pure maple syrup.
Leftover waffles? Cut in half and freeze. Then pop in a toaster for midweek breakfasts and snacks 😋 .

Strawberry Chicken Salad with Strawberry Balsamic Dressing

2 cups cooked chicken, chopped
4 cups romaine, chopped
2 cups strawberries, chopped
½ cup dried cranberries
¼ cup sliced red onion
¼ cup crumbled goat cheese
¼ cup sliced almonds
Strawberry Balsamic Dressing:
1 cup strawberries
¼ cup balsamic vinegar
¼ cup extra-virgin olive oil
1 tbsp Dijon mustard
1 clove garlic, minced
¼ tsp salt
¼ tsp pepper
To make the strawberry balsamic dressing: In a food processor or blender, pulse the strawberries, balsamic vinegar, olive oil, dijon mustard, garlic, salt and pepper until smooth. Set aside.
In a large bowl toss the chicken, romaine, strawberries, dried cranberries, red onion, goat cheese, and sliced almonds. Toss with dressing or drizzle on top of served portions.

Some people struggle with self control. They want to lose fat but have difficulty saying “no.” Often times they mentally justify it in saying they’re “flexible dieting.” But flexible dieting doesn’t mean “eat junk and lose fat.” It means “don’t feel guilty for having a treat - but you still have to be super consistent to make significant, lasting changes.” For them, practicing self control and saying “no” more often might help them achieve their goal.
Other people struggle with food anxiety. They get anxious at the thought of going out to eat at a restaurant because they don’t want to “ruin their progress.” They feel bad for having a slice of cake at their own birthday party. They, logically, know it sounds silly and they often give their friends/family/clients amazing nutrition advice that promotes a more flexible approach...but they struggle with it themselves. For them, saying “yes” more often and having a treat might help them achieve their goals.
Progress is not only measured in weight loss or fat loss or measurements or numbers or quantifiable data.
Progress is also measured in mental, emotional, and behavioral changes.
And, candidly, if you don’t improve your mindset first, any physical changes/improvements are going to be short-lived. Because sustainable results only happen with a sustainable mindset.

Protein powders are a convenient form of getting more protein but are not by any means necessary if you are getting plenty of protein from food.
