Grilled chicken sandwich with pesto & roasted red pepper __ This sandwich was part of our lunch at Devin Alexander's presentation of her new book of diabetes-friendly recipes,"You Can Have It!," at Melissa's Produce. Devin makes the pesto from both basil and carrot greens, blended with nonfat Greek yogurt and olive oil and flavored with garlic, Parmesan cheese and lemon juice. In addition to grilled boneless skinless chicken breast, the sandwich has arugula, sliced tomato, very thin slices red onion, and strips of roasted sweet red pepper. Devin developed her recipes according to the guidelines of the American Diabetes Association. In her book Devin made the point that the recipes are not just for people with diabetes, but for anyone interested in nutritious meals and fitness. Devin knows from personal experience how challenging it can be to follow a regimen. She lost 70 pounds and kept it off for nearly 30 years! Here's a #thursdaytip for ya... I've been meal prepping a lot lately. I find the busier I get the more I fall back on prep work. I'm not organized at all by nature and I like my food made fresh fresh fresh. So without proper planning I'm in big trouble. I hate taking little containers of dressing for my salads. So messy. I've started to layer in all my veggies and proteins, put any toppings on (measured!) and then top off with my dressing and cover. When I'm ready to eat, I shake it up like a madman (cardio? 🤷) I make all my own dressings because I hate all the stabilizers and additives in the store bought stuff. I usually mix up just enough to use immediately. So I play around with my concoctions. My recent obsession is... Busting out the mandolin to slice all of the things.
For a lot of people, cooking for themselves is a drag. It’s more fun and fulfilling to feed others. And generally this is true. But sometimes you just want to eat what YOU want to eat and not have to make sure the others (read 2 10.5 year old boys) will eat. So for me, cooking for myself is a luxury. Tonight I marinated some lacinto kale in fresh lime juice, olive oil, freshly grated ginger and lime zest and shallot. I massaged it like it had just run the Marine Corps Marathon. I took some shrimp and cooked them with just a little salt in a sizzling hot cast iron skillet. When they were done I gave them a bath in a mix of Sriracha mustard (there is such a gift from god) lime juice and soy sauce. Put the whole thing on some organic corn tortillas and topped with some chopped cilantro, green onion and apple (to cut that heat because believe me that mustard is spicy!) This is my food. Simple, spicy and satisfying. Middle Eastern Chicken Kabobs (use a grill if you have one). Cube chicken breasts and marinate in ketchup, mustard, mayo or yogurt, and hot sauce. Heat pan with oil on medium-high heat. Spread out chicken kabobs and cover with lid. Leave small opening between the lid and pan. After 10-15 min, lightly sprinkle sage, cinnamon, cardamom, salt and sumac over kabobs. Turn heat low or medium-low. After a few minutes, flip over chicken and sprinkle spices on the other side. For those who don't know, cacao nibs are nutritious little morsels that not only add the essence of chocolate to foods, but also a kick-ass crunch! 🍫 🍫 🍫 You can purchase cacao nibs online, they;re also available at many natural foods and specialty shops - I've even seen them at chain grocery stores here in the Midwest. Cacao nibs have all the benefits of eating dark chocolate, without the added sugar. They are high in fiber, protein, and antioxidants, and contain the same mood-boosting chemicals and lipids that make a bar of dark chocolate so dank. 🍫 Cacao nibs are very minimally processed and derive from the cocoa or cacao bean (actually a seed pod) which comes from the Theobroma tree (also known as the cacao or cocoa tree). People have been enjoying the culinary benefits of the cacao tree since around 1400 to 1500 BC in Mesoamerica. Artifacts from ancient Aztecs reveal that a beverage made from cocoa beans had been consumed, but it was much different than the hot cocoa beverage we think of today. Cacao beans were also used as currency across Mesoamerica, prior to the Spanish conquest of the Aztec Empire. 🍫 Cacao nibs are simply a part of the cacao seed, or bean, that has been harvested, fermented, dried, cleaned, roasted, cracked, and then removed from the shell. RECETA DE TZATZIKI Esta receta es súper fresca y es un snack muy saludable y fácil de preparar... Se necesita: 🔹2 tazas de yogurt griego 🔹1 diente de ajo 🔹el jugo de medio limón 🔹1 pepino 🔹hojas menta o de hierbabuena 🔹aceite de oliva extra virgen 🔹sal y pimienta Se pela el pepino, se ralla y se pone a escurrir en un colador con un poco de sal. En un bowl se mezclan todos los ingredientes, menos el pepino. Se escurre el pepino y se agrega al bowl. Se sirve con pan pita, crudités o totopos.

I eat breakfast twice a day. . . . Avocado toast with poached eggs and super skinny bread 😭 I mean thin hahaha, touch of Thai basil+cilantro (umm not a fan, makes me want to have Phở instead) and finally fresh ricotta ( hella good! ). They have some sorta spread on the bread but i ate it too fast without really trying to figure out what it was. Oops. I imagine it’s some sort of sundried tomatoes almond butter spread - okay I made that up but doesn’t it sound good? . . .

Crunchy kimchee with fresh piping hot charred meats wrapped in lettuce - already filled with condiments 🤗 - dipped in a sesame oil and salt concoction. Add that rice paper! That messy bite is ohhhhh soooo good!!!! . . .

Soft shell crab Thai mango salad 🦀 . . 🌶🌶🌶 . . I love spicy food! The spiciest thing I have ever eaten is a mango salad in Krabi Thailand. they make the dressing by grinding the Thai chilies 🌶 in a giant stone grinder, red AND green chilies, then dried crispy shrimps, and some sugar and fish sauce, then shredded crunchy mango, with all sort of herbs and peanuts, allllllllll kinda beauty. It was the best mango salad I’ve ever had, and THE spiciest dish! Blew my mind! 😳🔫🎉
🍄 me up and 🍤 me down! . . . I have always loved mushrooms and how they just soak up whatever flavors and juices you’re showering them with. When cooked the right way at the right temp, they will dehydrate just enough while still maintaining a bouncy texture. And those shrimps!!!! Ugh I can eat soooo many of those suckers! Really I can talk about food all day long! . . .
‘I’m on high fat high protein high carb’. Seriously though! Shout out to allll women out there, we are constantly struggling with dieting and exercising and feeling inadequate to the ‘standard’ of today’s society. I LOVE food and there’s nothing that can stop me from enjoying my food. But I do also LOVE feeling great in my clothes. Yup the struggle is real. What has really worked for me so far is to eat what you want but control the portion. It also makes a huge difference if you eat as natural as possible say pink salt, grass fed beef, wild fish etc. It’s hard! But it works! And of course, exercise, doesn’t have to be some hardcore thing but even just walking and simple all body movement like push ups and planks etc. Make the choice that is FOR you not against you. . . .
