I recommend boiling corn before BBQing so it's juicier .
To add a delicious addition to the corn, after cooking dip one side in sweet chilli sauce before rolling in desiccated coconut mmmmm delish!
Try leaving the corns outer leaves on and twisting them back so your guests can use as a handle to eat the hot corn!

Sunshine Sunday’s are what BBQ’s were made for. That and special family time, which for our little family of four is not often enough. When we moved into our house 3 years ago my dear Hubby had never BBQ’d in his life. The thought terrified him as he just didn’t know the best way to cook different things. Fast forward 3 years and now he loved being at his barbie!! He’s the first one to suggest it and cooks everything to perfection. Never a burnt sausage on our BBQ!! 😊
This plate used both my HexA & HexB. I made the burgers, pork & apple. Now I know what you hard core SWers are going to say...you need to syn the apple...but I’m not because I’m a rebel 😈 I also make some Cajun chicken skewers, then we had BBQ beef kebabs from @aldiuk

Used fresh pineapple instead of a bun to make this hamburger🍔 Next time I’d slice the pineapple thinner. The sweetness was a bit overpowering. Definitely recommend a🍴as well if you hate sticky hands!

Green Beans with Garlic Sauce 👇🏼 3 vegetables
1 ½ cups green beans, washed and trimmed
1 Tbs mayonnaise
1 tsp lemon juice
1 teaspoon Dijon mustard
1/2 teaspoon minced garlic
½ teaspoon black pepper
Fill a large pot of water and bring to a boil. Immerse the beans in the boiling water for 5 – 10 minutes, depending on how you like them. Turning the oven on in this heat seems unbearable, but somehow standing in front of a 400 degree bbq is totally reasonable!
If you are like me and have a lot of bbq’s to attend this year, but are looking to stay on plan, I recommend eating a balanced meal before attending. This will ensure that you won’t be reaching for the chips and dip the second you come through the door. If that isn’t an option for you, fill up on veg and salad, skip the bun and drink lots of water in between your other beverages.

Shrimp and Summer Veggie Foil Packs😍
1 small zucchini, ends trimmed, sliced into half moons (1 1/3 cups)
1 small yellow squash, ends trimmed, sliced into quarters (1 1/3 cups)
1 pint grape tomatoes
1 green bell pepper, chopped (1 cup)
1/2 small red onion, chopped into chunks and separated
1 1/2 cups fresh corn
1 1/4 lbs. large (21/25) raw shrimp, peeled and deviened
3 Tbsp olive oil
3 garlic cloves, minced (1 Tbsp)
Salt and freshly ground black pepper
1 tsp paprika
1/2 tsp celery seed
1/2 tsp dried thyme
1/4 tsp cayenne pepper (or to taste, optional)
1 1/2 Tbsp minced parsley, for garnish (optional)
4 lemon wedges, for serving
Preheat a grill over medium-high heat to 425 degrees.
Cut 8 sheets of 12 by 14-inch heavy duty aluminum foil. Use two sheets of foil per packet.
To a large mixing bowl add zucchini, squash, tomatoes, bell pepper, red onion, corn and shrimp.
Drizzle over olive oil then sprinkle over garlic, 1 tsp salt, 1/2 tsp pepper, paprika, celery seed, thyme and cayenne pepper.
Toss mixture well to evenly coat.
Layer two sheets of foil per packet, with the first sheet of foil laying in opposite direction of the second. Divide mixture among double lined foil adding it to the center in a rectangular shape.
Wrap up sides of first sheet of foil and roll edges several times to seal, then place second sheet going opposite length and wrap while rolling edges to seal.
Grill until shrimp is cooked through, about 12 - 14 minutes, while filliping packets over to opposite side once halfway through grilling.
Carefully open packets as steam will escape. Sprinkle with parsley and serve with lemon juice for spritzing.

Mango Salsa 😋😋 1 mango chopped
1/2 English cucumber chopped
1/2 red onion chopped
1/2 red pepper chopped
3 tbsp Apple cider vinegar
Mix all together, cover and refrigerate for 3 hours.

HEALTHY BURGERS AND FRIES!! The other night the crew was craving burgers on the grill for dinner and having eaten like crap all throughout the holiday I was thinking to myself, I really need to eat something healthy tonight. So, I turned the potential for a less than healthy meal into a pretty good situation! First, organic grass fed beef burgers are a must!! Second, lose the bun and choose a high quality non processed cheese and top with some delicious options like avocado and carmelized onion....so much flavor!!! Third, instead of corn on the cob with butter (which I made for the rest of the crew) I roasted brocolli and cauliflower with some olive oil! Fourth, we baked sweet potato fries in the oven. BUT!! and here's the rule!! I portioned out the fries. Yes I counted. 14 fries was a serving and I stuck to it. Yes, it was hard to do but at least I got some fries and kept the quantity in control!! And there ya have it!! A healthy alternative to a potentially disastrous meal!! -
