This is my Moroccan cauliflower cous cous salad. Its really fresh, spicy, sweet, salty and just plain yummy!
The cous cous is raw cauliflower blitzed in the food processor until the desired texture is achieved then steamed for a couple of minutes to remove the rawness.
I then make a dressing from Ras El Hanout (which is a north African spice blend containing made of 12 different spices including paprika, cumin, cinnamon, chilli, coriander and sometimes rose petals – my blend from @waitrose
does have rose petals in it) mixed with lemon juice, garlic oil, honey, salt and pepper and mix this into the cauliflower. I then add in chopped cucumber, red pepper, grated carrot, black olives, half a small preserved lemon, chickpeas, fresh mint and coriander. Its all then topped of with some toasted almonds and pomegranate seeds.
Dried fruits work so well mixed into this, such as apricots, dates and raisins. I don’t add these I avoid dried fruit but they are quite commonly found in Moroccan dishes.
There is some chopping involved in this but other than that it’s a really simple dish. A big dollop of hummus with some harrisa swirled through it on the side works really well too!
I always make enough for the lunch the next day too, its good to take to work for a packed lunch!

Being an adult means pizza for breakfast 🍕
This Whole30 approved breakfast-pizza is the perfect excuse to eat pizza first thing in the morning and have it NOT be leftovers from a late night delivery after a few draaaanks, ya feel me? 🙈 You can enjoy this one guilt free!
How? Mix 2 cups of shredded sweet potato, 6 eggs, 1/4 Cup coconut flour, 1/2 cup almond flour, salt and pepper, in large bowl. Mix until combined and all ingredients hold together. Press onto parchment lined baking sheet in circular shape. Bake for 10-12 mins. While pizza crust is baking, slice @applegate
chicken sausage, cilantro, and avocado. Remove pizza crust from oven and line edge of crust with @applegate
slices. Add 4-5 @vitalfarms
eggs on top, season with everything but the bagel, add chopped cilantro, oregano and any other toppings desired. Bake for 7-10 mins, remove from oven and top with avocado, slice and enjoy!
Moving changed my routine quite a bit and my body is not liking me for it! Evening workouts, eating late dinner and waking up to go straight to work is not my favorite schedule, since I’m used to morning workouts and eating dinner before 8pm. Thankfully, I am not stuck and can change! I’m starting today with a green smoothie. It’s one giant handful of spinach, 1/2 banana, 1 Tbsp flax seed, 1 Tbsp peanut butter, 1 cup unsweetened almond milk, 1/2 cup water, and a handful of ice! Cheers!

Banana bread is probably the most popular recipe I see on Instagram. Why? Cause it's so dang easy to make and it comes out delicious every time!! When I was at school I swear I was making it once a week (I have no self control 🙈) but seriously, if you think you can't bake, try making banana bread! And this one is gluten and sugar free!! 🤩So, I guess it's okay to eat the whole thing? 🤔 Recipe below 👇
Recipe: Mix 4 overripe bananas, 4 large eggs, 2 tsp pure vanilla extract, 1/4 cup applesauce (Subbed for coconut oil). In a separate bowl, combine 1 and 3/4 cups blanched almond flour (@bobsredmill
), 1/2 cup tapioca flour, 1 tsp baking soda, 1/2 tsp baking powder, and some cinnamon and a pinch of salt. Slowly combine dry ingredients into wet and dont overmix! Batter should be lumpy. Bake in a greased bread pan at 350 for about an hour or until toothpick comes out clean.

Felt like I needed my version of *comfort food* after a little bit of an emotionally rough end to yesterday. Some days it’s easy for me to forget I have ulcerative colitis and other days it feels like a slap in the face and it’s all I can think about 🤷🏼♀️ Yesterday evening was one of those times. So I went on a walk, faced my emotions, let myself cry and then did a couple small things to help me feel accomplished and productive despite my crazy mood 💛

So both Nina and I are sick. We both had the chicken (what really maters here is what the chicken ate and how it was raised, I had her brand sand reaction was much milder so this one is really bad) and somehow at the same time got congestion and sore throat. I know it might seem coincidental but the thing is if you have food allergies or sensitivities they can manifest in many different ways. One of them is flu like symptoms. And if you think about it—those symptoms are a sign of inflammation. I understand that seems like a stretch for many who think that food cannot possibly be responsible for that. But I know through trial and error and research that it does. Plus, any medicine you take is a chemical which react with your body chemistry as certain way then why food cannot not. Due to damage from vaccines and environmental pollution our bodies take a hit. Result a body that can not properly defend itself with symptoms that manifest as allergies and food sensitivities and many other issues.

I keep reminding myself of this. Sometimes it’s harder than others. You wouldn’t think it would be difficult at 44 years old, but End Stage Kidney Failure can take a lot out of you. It’s taken me almost 2 years to feel like I can deal with it. My hubby is AMAZING. I wouldn’t have made it this far without his love and devotion.

Start with mixing or blending up a teaspoon of fermented veggies into their favourite food such as dips, stews or sauces. With time, slowly increasing the amount. Eventually, they would be reaching for the kraut jar wanting to have some on their own accord. Don’t beat yourself up if they turn their nose on it. But I’ll give a little synopsis here. In case you missed it:)
Always try to have some healthy snacks in your bag for the actual travel itself. I look for a combo of protein and fat, like raw nuts or collagen bars from @primalkitchen
If the place you are staying has a fridge, head to a grocery store and get some cut up fruit and veggies and maybe some quick protein like hardboiled eggs.
When eating out, don’t be afraid to speak up for what you want. For example, fruit instead of toast and potatoes with your omelet. 👙☀️
You don’t need to spend hours in the gym when you travel. Fit in plenty of walking, take the stairs, and maybe do a few of my ass and abs moves that don’t require any equipment. 👙☀️
