to their products and customers!!! When their 10 grain bread debuted I was so excited to try it, and when I bought it my loaf had a HUGE hole in the middle. I went way out of character because I never complain when things go wrong, but I genuinely love their products and didn’t want this to keep happening, and for people to stop buying their products because of it. I sent them pictures through my personal email and they apologized, sent a detailed explanation of changes they were making to fix the problem, and sent me a coupon. I was so happy about the kind response and found perfect loaves in my grocery store following the date they shared it would be fixed by. I haven’t thought about it since, and have continued to buy their products and share that it is my FAVORITE gluten-free bread brand. I can eat it right out of the package or toasted and feel like I am eating regular bread. I have shared it with gluten-eating people and they enjoyed it too! Well, tonight I came home to an unexpected package and thought “I swear I didn’t order anything...maybe it’s a wedding gift” (my wedding is in two weeks). We turned over the box to find out it was a Schar-prise! They sent me a PACKAGE full of wonderful treats and swag as a token of their commitment to their products and customers. I am blown away and so thankful for such wonderful customer service and kindness! They didn’t ask for anything or even know who I was beyond my email. This was genuine. This was going a step beyond for their customers and I am so happy to share such a great experience with you all. I can’t wait to try some of these goodies and share with you all! I ♥️ veggies on a Monday... kinda. I always make my Monday night dinners all about restarting my clean eating 🌱 after the weekend. Plus it gives me a chance to use the locally grown picks I grabbed at Saturday farmers markets. This week’s choices were: spaghetti squash, zucchini, eggplant, tomatoes and onions (all are in this recipe) 🤗 On the menu for tonight was a mixed veggie spaghetti squash! Low carb and packed with tons of vitamins and minerals. Recipe below! Bon Appétit! 👩🏻🍳🍴 —————————————————————— Ingredients:
1 medium summer squash (will only need 1/2 once cooked)
1/4 medium zucchini
1/4 medium eggplant
1/4 red onion
2 medium plum tomatoes
2 gloves of garlic
3 teaspoons of organic pesto
salt, pepper, parsley, red pepper flakes to taste
1. Preheat oven to 375ºF
2. Cut squash in half lengthwise and remove seeds (you can roast these like pumpkin seeds as a great source of zinc)
3. Sprinkle oil, salt and pepper on inside of squash
4. Place facedown on cookie sheet and bake for 40 to 50 minutes or until you can poke cleanly through with a fork
5. Allow to cool then scrape with a fork to create "spaghetti" SAVE THE SKIN. ....while squash is in the oven
1. Chop remaining veggies into large diced and slice/ mince garlic
2. Heat a deep sauté pan coated with olive oil over medium heat.
3. Add all veggies, cover, turn to low and allow to sit. Stir occasionally adding salt and pepper to taste.
4. Take scraped spaghetti squash and add to pan with other veggies.
5. Add pesto and turn heat to medium/ medium-high.
6. Stir all veggies together and add parsley and red chili flakes to taste.
7. Scoop mixture back into squash skin and place in oven ON BROIL for 5 minutes max
