Happy Father’s Day to all the special dads out there! . This year is bittersweet for me, as I celebrate the holiday with my wife Chelsea, and my two beautiful children, Brayden and Alea... . But it is also my first Father’s Day without my dad, who many of you know passed away last August after a hard fought battle with a esophageal/stomach cancer. . He was always there for me. He was really my hero. . And he always encouraged me to go after my dreams and goals and what I wanted in life, and to be the BEST version of MYSELF! . He sacrificed SO much, so that I (and my brothers) can have the opportunities that he never had. . I was holding my fathers hands when he passed, alongside the rest of my family. . After I thanked him for truly being the most incredible man and father, for all he GAVE to us and others - I made a vow... . I’ve vowed that I would do everything possible in any way, to prevent as many people from suffering as he did from this dreadful disease called CANCER...and any other chronic degenerative disease for that matter. . I find it so fortuitous that the week he passed, was the week that I finished writing my new book GET OFF YOUR ACID. . The book is dedicated to my father, and all the brave souls who have died or currently battling cancer. . Here is my message to you on this day - it is NEVER too late! You need to get that! . It’s early morning and another beautiful day ahead here in the Midwest. As I’ve shared in a previous post, for over the past year, I faithfully have been starting my day with a warm glass of lemon 🍋 water. As I age and things that once seemed important to me or for that matter not important have shifted, including better eating habits and overall health, I’ve been reading and researching what to eat and drink and what not to. It is beyond overwhelming to me all the literature out there and I often think what’s one supposed to do and how do I know what’s best🤔? While some things are obviously clear others, not so much so it is with anything, I just take it one day at a time and try to do the best that I can weeding through the volumes of information available and try to choose what works best for me. While I still indulge in those not so wonderful choices because hey let’s face it, I’m human, I try to just stay mindful of what I’m doing. I recently found an excellent book by @drdarylgioffre (Get Off Your Acid) which I’ve also shared in previous posts and have been trying to incorporate what he teaches in my daily life. It’s all about #moderation . Balancing #ph is the start of better health and so it is that I’ve now incorporated a glass of #applecidervinegar in water into my day. Who would have thought that cauliflower could be an excellent stand in for meat? . This dish really feels like eating a steak in many ways. . But compared to beef – or even worse, chicken (which is the most inflammatory meat of all, having the HIGHEST levels of arachidonic acid, otherwise known as Omega-6 fats)...this recipe is ANTI-inflammatory! . INGREDIENTS [Serves 4] . 1 large head cauliflower 1 Tbsp. coconut oil Salt (Celtic Grey, Himalayan, or Redmond Real Salt) and pepper to taste . ANTI-INFLAMMATORY STEAK SAUCE . 1 Tbsp. extra virgin olive oil 1 tsp. freshly grated ginger 1 tsp. ground cumin 1⁄2 tsp. ground turmeric Small handful of cilantro, chopped . DIRECTIONS: . Preheat the oven to 400 degrees Fahrenheit. Cut the stem off the cauliflower and remove any leaves. Using a large knife, slice the cauliflower from the top to the base into “steaks” (3/4 inch thick or so). . Season each steak on both sides with sea salt and black pepper. . Heat the coconut oil in a pan over medium to high heat. Cook the cauliflower steak until golden brown and crispy, and then turn over and do the same to the other side (about 2 minutes each side, give or take, depending on the size of the cauliflower steak). Then transfer the steaks to a baking sheet. . In a separate bowl, whisk together olive oil, ginger, cumin, and turmeric. Brush (or drizzle with a spoon) the mixture onto the cauliflower steaks. . Roast in the oven until tender, about 15 minutes.
