Lately I’ve been in a zone where if I can’t immediately figure out what to make for dinner, I’ll make buffalo chicken. Buffalo chicken something, whether in the slow cooker, in a tortilla pie, or in a grilled cheese. Recipes all on my blog, btw! Since we can’t ever have enough buffalo chicken recipes (who’s with me there?!), here’s another. These buffalo chicken thighs bake up crisp and wonderfully spiced, with a sweet heat buffalo sauce drizzled over top for serving. Every time I buy chicken thighs I can’t seem to make anything else! This 5-minute chicken taco bowl recipe (link in profile) is easy to make and full of flavor. 🥙 It literally comes together in 5 minutes, which is perfect for weeknight dinners! The only thing you have to cook is a sweet potato. If you wanted to avoid cooking altogether, use another carb-y thing. The sweet potato is addicting though; the cumin and flaky salt are perfection against its natural sweetness. I’ve eaten it 2 nights in a row. that is! I have been experimenting with fun cocktails lately and this one reminds me of those chocolate boxes you get at Christmas. My granddad used to get all the women in the family a Winston’s box of chocolates. I used to love pulling out the guide that told you where the gross nut filled ones were, where the glorrrrious dark chocolate ones were, and where the ever elusive fruit flavored ones were. If you’ve ever lost that guide sheet then you know taking that first bite can be either pure joy or pure disgust. Haha I loved the fruit flavored ones the best and this combination of @chameleoncoldbrew
Mexican coffee (my favorite), with @cointreau
, and a dash of coconut milk takes me back to that first bite of the orange flavored chocolate. Although I’d argue the ingredients in this cocktail are far superior to whatever was in this chocolates. But, every time I see a box, it takes me right back to the holidays with my family. Perhaps this beverage will do the same now. ❤️
My favorite moments in the kitchen are when little hands are involved in each step, decisions on decorating are left up to their creativity, little messes turn into big messes, and little minds ask many questions.

We hit 70 today so I made the most summery salad ever because in the Midwest we love to get ahead of ourselves.
TROPICAL ESCAPE ORANGE BLOSSOM COCKTAIL
This tropical escape orange blossom cocktail is the perfect easy cocktail to serve when you need a taste of the islands in your day!
⅔ cup orange juice
⅓ cup lemonade
Splash of lime juice
½ - 1 tsp Nielsen-Massey orange blossom water (to taste)
1-2 shots rum with coconut liqueur (can also use straight rum if not available)
Orange (for garnishing)
Paper umbrellas and straws (optional)
Shake all ingredients with ice in a mixer jar.
Serve immediately over ice with an orange twist or orange slice on the rim.

Dunno about you but I always have leftover quinoa, that stuff is so filling. My fav thing to do with it is make Quinoa Casserole 👉🏽In a large bowl, beat 2 eggs, add 1-1.5 c cooked quinoa, then any other cooked meats/veggies. Tonight I added about 1c cooked taco meat & mushroom mixture, then mixed in about a cup of fresh salsa. Topped with cheese and cooked this super fast way... on the burner for 4-5 minutes (cooks the bottom) and then broiled in the oven for 1-2 minutes (cooks the top). Dinner in 5 hands on minutes and reused the leftovers. Mom tip: if you top round things with cheese, call them pizzas and cut them like pizzas, they will likely eat it 😏. Taco Pizza, boys!

like 15 years ago which means i basically consider it my own recipe now. i’ve used it for the kids birthday cakes, split in half and filled with whipped cream and fruit, and as a loaf cake for tea. this version is with pistachio flour, orange blossom water and olive oil topped with creme fraiche and toasted pistachios.

Shredded chicken quesadillas using @sietefoods
cassava+coconut flour tortillas. .
Directions: boil chicken breasts for 20ish minutes with a pinch of salt. Once fully cooked through, placed chicken into bowl and using two forks, pull chicken apart until completely shredded. Add dashes of cumin, chili powder, oregano, and paprika to chicken. Mix thoroughly. Place 1 tortilla into heated plan with olive oil. Place shredded cheese (I used mozzarella) on top of tortilla, then add chicken. Wait until cheese has melted and tortilla is slightly brown. Place another tortilla on top and flip over. Cook until other side is also slightly browned. I served mine with chopped grape tomatoes and guacamole. Wish I had lime and cilantro to add 😭 - still so good though! .

Chocolate amargo 150gr
Esencia de vainilla c/n
Sal fina 1 pizca
Bicarbonato de sodio 1 cdita
Dulce de leche 400gr
Crema chantilly 200gr
Derretí el chocolate con la manteca a baño maría, entibia. Batí ligeramente los huevos con el azúcar y la esencia de vainilla e incorpora el chocolate fundido.
Agrega todos los secos e integra todo. Colocálo en un molde para torta previamente enmantecado. Hornea a 180C de 18 a 20 minutos.
Una vez que este fría, agrégale el dulce de leche y arriba la crema chantilly. Rallále un poco de chocolate por encima para decorar y disfruta de esta delicia!

hey you 👋🏾...i’m poppin’ in to show you that i’m indeed alive and to share this quick recipe with ya. cannabidiol or cbd is one of the latest trends in the health/wellness world. while i absolutely loathe trends and am the last one to jump on bandwagons, i’ve been feelin’ cbd oil. the benefits are plenty but to name a few, cbd oil has been linked to relieving anxiety/depression, pain/inflammation, promotes cardiovascular health, and lowers incidence of diabetes. cbd is a compound found in the hemp/cannabis plant...and to answer the most asked question, no, it will not get you high because of either low or non-existent thc levels, research it...have a great week homies ✌🏾
👉🏾 now onto the recipe ⬇️😋🍫
•1 cup coconut flour
•1 cup almond meal flour
•6 medjool dates, pitted
•2-3 tbsp coconut butter
•1 cup raw almonds
•2 Brazil nuts
•1 tsp CBD oil
•1/2 cup melted coconut oil
•1 tsp vanilla extract
it helps to soak the dates in some hot water to soften them for use, then toss everything into a food processor or blender and process/blend everything until well combined. roll into balls or put into a small cavity mold for bites. refrigerate for a few hours. if desired, drizzle on some dark chocolate and top with flaky sea salt, enjoy!
