Salmon Croqette Hushpuppies
When I was little one of my favorite meals my mom used to make was #salmon
/mackerel croqettes, homemade biscuits, and plain white rice with real salted butter. Even though the salmon came out of a can, she made those fried fish cakes light and crispy. I couldn't get enough!
This is my homage to one of my favorite dishes. I added caramelized onions (for sweetness), an egg, spices, cornmeal, and flour to a can of salmon. Lightly hand mixed it and used a small ice cream scoop to create little balls of goodness that I fried in peanut oil. We had tartar sauce and honey mustard for dipping. Great little appetizer!
