Just gotta love pay day AND fresh produce grocery shopping day! I can’t ever bring myself to buy makeup, clothes or home decor anymore. I would much rather spend my extra bucks on taking care of my body by fueling up with all the good foods. When you feel good you look good. This could also be that my last job was managing a home+clothing store (4 years) and I used to spend my extra bucks on making my house all cute with William Sonoma and Pottery Barn and then all my clothes were the brands newest trend of the week...or splurge on Free People and Anthropologie. Chicken made in the crockpot because duh, crockpots make life SUPER easy! BONUS: after you’ve had your fun with tacos, save the broth and any left over chicken and veggies in the crockpot and then 👏🏼BAM 👏🏼 You also now have yummy soup. 😋 . . . • 7 chicken breasts ✨ • 1 can diced tomatoes ✨ • 1/4 cup diced green chilies ✨ • 1 can corn - rinsed and drained ✨ • 1 can black beans - rinsed and drained ✨ • 1 cup FRESH cilantro ✨ . • SEASONINGS/BROTH: fill crockpot with water until chicken is covered, 1 tsp olive oil, pinch of turmeric, cumin, cracked black pepper, sea salt, paprika, dill, seasoning salt, splash fresh lime juice ✨ . We used this recipe for tacos last night (gluten free mini corn tortillas warmed up in a pan for 30 sec on each side, toppings + EXTRA fresh cilantro), we also meal prepped gluten free enchiladas and soup that we will serve with jasmine rice. OCTOBER PROGRESS REPORT: I no longer go to food in a moment of stress for comfort or for a reward in a moment where I “deserve a treat”. Instead I go to the gym or take the dog for a walk. Saying no to all the cheese fries, cupcakes, potato chips and pizza has NEVER felt this way before; it feels SO good to say no. The old me REALLY would have wanted to order a steak tonight at a family dinner and a side of bacon-cheese fries. This new me chose a 8oz plain grilled chicken breast and a cup of steamed asparagus. It really hit me today how far I’ve come. I’m only 20 pounds away from weighing LESS than I did my senior year in high school. I think I’m now at a point in this journey where it’s harder to go back to the old me than it is to keep going after the healthier me. I share all of this because if anyone is struggling to make a change in their life, rather that’s with their health, a job, a relationship, anything at all - never give up. When you think there is no progress in sight and you feel like it’s easier to just give up, that’s your indication you need to try harder. Viva Chicken’s SOPA DE POLLO! (My copycat recipe) 😋 . . . • 5 Skinless Chicken Breasts - seasoned with cumin, paprika, sea salt, black pepper, turmeric, oregano, Mrs. Dash original salt free seasoning✨ • Organic fat free-low sodium Chicken Broth✨ • 1 1/2 cup Jasmine Rice✨ • Green Onions - diced✨ • 2 Red Peppers - diced✨ • Cilantro - roughly chopped✨ • 2 cups water✨ • 1 tablespoon olive oil✨ • 1 cup of their mild (yellow) sauce - I was able to purchase a 12oz bottle at @vivachicken for only $7.00 🙌🏼 . I made it super easy...I just threw everything except for the rice into the crock pot (I added the rice in towards the end) and let cook on high for 4 hours. Once the chicken was cooked I finely shredded it up on a cutting board then placed back into the crock pot. Once the rice was cooked in a separate pot I added it into the soup. Add extra sauce when serving if needed/to tase. On days I don't think I've made any progress I have to step back and look through old photos in attempt to fix my brain to see the changes.
