Another salmon dinner 👏 I swear, I could eat salmon every day; it’s delicious and you can do so much with it. I was starving when I got home 🏠 so I whipped this up and it turned out really well! This is also my first time making zucchini ribbons so I’m pretty excited they turned out well too. So what’s on the plate and how was it prepped? We’ve got sautéed asparagus in garlic and butter, a small baked potato 🥔 with cheese 🧀, butter, and lots of salt (I ❤️ salt), zucchini ribbons that I sautéed in garlic and butter, and salmon that was seared in a garlic, lemon 🍋, butter sauce. Hmm 🤔 that’s a lot of butter 😂 I don’t put too too much in my pans because I don’t want a super heavy dinner but I like using butter more than anything else and trust me folks, don’t be afraid of butter!-everything in moderation right? Plus when a dinner tastes this good, who cares what everything’s sautéed in? OMG basil is back in season! If you need me I’ll just be over here eating pesto pasta on repeat. Pesto is hard to screw because it’s made from such yummy ingredients. Just combine, taste, adjust, eat. I’m going for health too, though, so this one is a big bunch of fresh basil, one leaf of kale, a big handful of toasted walnuts and pecans, five cloves of garlic, a big handful of nutritional yeast, the rind and juice of one lemon (make sure it’s organic if using the rind!), a splash of homemade cashew-pecan milk, a drizzle of olive oil, and a scant teaspoon of salt. I’d love to hear your tricks and I’ll share mine as well 😎😎 ... 📸 @themealprepmanual .. . Melons are so great because they are pretty much just water disguised as food. Because of this, you get lots of volume for little calories. Both these bowls were around 500g worth of fruit and right around 200 calories. I am a boredom eater and during April-June I find myself on the couch watching the NBA playoffs often. It’s almost like I have some psychological need to eat while I sit there because if I don’t have food, I won’t watch the games. Melons are great because they provide so much volume for few calories and I can spread if out over an hour or so 👍👍 . . Here’s how I pick my cantaloupe. They have been really good this year so I definitely recommend buying one next time you’re at the store. . 🔸Find one that is heavy for its size 🔸Make sure there are no major blemishes. 🔸Press on the butt and if it is soft, it’s ripe. If it’s firm, not yet. The butt is the opposite side of the stem. I don’t know what the actual name is but it seems like a butt to me. . . How to pick a good watermelon 🍉 🔹Find one that is heavy for its size 🔹Find one that has a large sun spot. 🔹Find one with those brown marks on it that feel and look kind of like tree bark. Drinking from these gallon bottles are so intimidating. Id look at them like "thats all I've drank?!" Feeling like the end was never near. Since Ive switched over my own bottle, I havent had any problems hitting my daily goal. Tortita de Mango y Coco, que no es porque la haya hecho yo pero en serio quedó muy muy rica. Preparación: -En un bowl mezclar 3/4 taza de leche de coco, 2 cucharadas de jugo de limón y dejar reposar. Después de 15-20 minutos agregar 1 huevo, 1/4 taza de aceite de coco, un chorro de extracto de vainilla e integrar. -En otro bowl incorporar 1 taza de harina integral, 1 taza de harina de almendras, 1 cucharada de polvo para hornear, pizca de sal, 1/2 cucharadita de canela, y 1/2 taza de azúcar de coco. -Vertir los ingredientes húmedos en los secos, y revolver hasta que estén bien combinados. -Agregar un mango maduro pelado y cortado en cubos y 1/2 taza de escamas de coco. -Llevar a un molde para torta y hornear por 30-35 minutos a 180 grados. Estoy a full con el mango últimamente, queda bien con todo. Algún fan más por aquí? Levanten la manito 🙋🏻‍♀️
