Dairy- free sour cream...and this is righteous!🏄🏾♀️
A mash-up between cashew and coconut cream! It’s silky, creamy and sour!!! 🧞♀️
Coconut 🥥 cream
PB8 probiotic capsules
1. Soak 3/4 c cashews overnight in filtered water. Meanwhile put a can of coconut milk in fridge (something with only guar gum as an additive)
2. Drain and blend cashews in blender. Scoop the hardened cream of the coconut from can and add to the blender. Blend these until smooth. If it’s too thick, add a couple TBSP of filtered water, just enough to allow it to blend with no lumps.
3. Open 3 probiotic capsules and mix into the cream mixture. Line a mesh strainer with a coffee filter and place over a small bowl.
4. Scrape probiotic cream mix into the filter, cover it all with plastic wrap and set in a corner to drain for 24 hours...away from heat and sunlight.
5. After 24 hours taste to see if the mix has cultured and desired sour taste reached. If so...you are done!!!
I have been playing with making cultured cashew mozzarella and other dairy-like substitutes since dairy tends to make me break out. Which is a shame because it’s really one of the only things I crave. I can handle butter and use ghee all the time with no issues....but I guess those don’t have as much of the proteins in them. Anyway, this was a first attempt and it is freaking awesome AF. I thought I was going to have to add lemon juice or salt and it really doesn’t need it. This makes just over a cup. Next time I need to double everything.
Also of note: I think the temperature affects the speed of the culture. My house is roughly 73-78 F night to day...(23-26 C for those of us 🇨🇦 or anybody else off the Imperial system). So if your house is colder you may need to culture longer...

Non posso, non ho tempo, non ho voglia o il cibo non sa di nulla..quante volte avete sentito dire queste parole dalla gente per giustificarsi? Magari seguite da: dai però non sono così grasso/a (riferito a chi magari ha appena cominciato e ci sta davvero mettendo il cuore). A queste persone io dico: smettetela di trovare scuse e paragonarvi ad altri e muovete il culo! Se vi fa sentire meglio confrontarvi con chi non c'entra nulla o è all'inizio del suo percorso non vi farà migliorare, anzi vi rende solo persone peggiori.
Se vuoi puoi! Anche mangiare il sushi durante la settimana e rispettare comunque la dieta.

I merely went through the motions today while working out- I needed to get it done and I did. It’s a bit aggravating- but not every day is going to be a full of wonderful, bad-ass, strong moments. Some days, I barely make it through- and guess what- that’s OK! .
