I was told today by a friend that arnica tea is great for injury and healing. She gave me a bunch to try for my Fibromyalgia issues. Eating out on the road is tough. Especially when you are trying to make healthy choices, never mind living on a restrictive diet! When I travel, I always opt for a Chai Tea Latte from Starbucks, made with coconut milk, and I bring my breakfast of choice: sweet potatoes and turkey bacon! Make it the day before and reheat in the morning. If your hotel happens to not have a microwave, Shell or any other gas station will typically have one for public use. Just be obliged to buy something there first too...like a water or something. I highly recommend this book for all fibro thrivers! I started reading it on Kindle (free for Amazon Kindle Unlimited and you don’t have to have a Kindle reader). It’s eye opening on so many levels. There’s so much information that I’ve bookmarked or highlighted nearly every page.
🍕 PHOTO 51 🍕 Gluten free and vegan pizza! 🍕 So happy to see that @sainsburys online are now stocking @nodoughpizzaco pizzas for home delivery! 🍕 This one is the vegan margarita and for a gluten free and vegan pizza it tasted pretty darn good. The base is a cauliflower base and the toppings taste just like the real thing! 🍕 I’m a big fan of pizza and I have desperately missed making my own pizzas since becoming gluten and dairy free last year. But this is a winner! My son is home for summer break from college...and is going to indulge on this vegan life for a bit. So I made Vegan Lasagne for the first time. It turned out absolutely delicious 😛. I used Eggplant in place of pasta noodles, and made a Tofu Ricotta in place of cheese, in addition to: slow Roasted tomatoes 🍅, mushrooms 🍄, zucchini, Collard Greens, and marinara sauce. It took me a while to fix this because it is hard standing while doing my prep work. This picture was taken over a year ago. I got the chance to meet the fabulous @annielobert and hear her testimony firsthand. If you are unfamiliar, go buy Fallen right now and read it. You won't be able to put it down! While the afternoon was amazing, I was so sick. I was undiagnosed but knew something was wrong. I look back at these pictures and see so much extra weight, poor skin color, and the fact that my body temperature always ran hot, accompanied by sleepless and sweaty nights. Little did I know a few months later I'd be diagnosed with an autoimmune disease and fibromyalgia. Hearing those diagnoses wasn't the worst thing in the world because I finally had a direction to go with my health. I sought every all natural treatment I could find and took the advice of my good friend @essentiallylavina and started with Young Living. I take those oils every day now, along with several other supplements (found on my website, link in bio), and I've been able to come full circle. I'm the healthiest I've ever been. Made a late lunch today with my homemade keto friendly poppyseed dressing. I found a copycat recipe by @abountifulkitchen for my other favorite and tweaked it to reduce the sugars. @truvia takes sugar's place and I love it! Some years ago my bestie got me this amazing chocolate cake for my birthday with the stipulation that I have it in moderation because she saw the affects of my Fibromyalgia far before I could completely grasp it. Recipe posted below. 3/4 cup water 1 small head of cauliflower 1/2 teaspoon salt 1 teaspoon oregano 1 tablespoon nutritional yeast 2 tablespoons almond flour for the tomato sauce: 1/2 can tomatoes (200 grams) 1 tablespoon olive oil 3 garlic cloves, minced 1 teaspoon oregano 1/2 teaspoon honey salt + pepper — toppings: kale, torn into small pieces red onion, sliced finely black olives, sliced cashew cheese rocket 1. Pre-heat the oven to 200 ºC. Combine chia seeds with the water and set aside. 2. Blend cauliflower and squeeze excess water. Add the remaining ingredients along with the chia + egg. Combine fully until it feels like dough, add almond flour as needed 3. Transfer the dough ball to a greased baking pan + push down into a pizza shape (I like oval), leaving the edges slightly thicker. Place the base in the oven for 20 minutes or until lightly browned and set. 3. Meanwhile heat the olive oil + lightly fry the garlic until fragrant. Add the remaining ingredients + simmer for 10 minutes. 4. Lightly fry the red onion + kale in olive oil for 5 minutes until softened. Set aside. 5. Remove the pizza base from the oven + add the tomato sauce, followed by the red onion, kale + olives. Return to the oven for 8-10 minutes. 6. Drizzle with cashew cheese + sprinkle with rocket. This is my first cooked and self prepared meal of the month! Last month my sister @foxzeeb visited from California and I hung out with her three nights in a row. My body was accustomed to so much activity and it began breaking down and I became very ill! I had two ear infections, extremely sore throat, sinus infection, and a stomach virus. I have been in the bed pretty much since the last week of April. I knew I had done too much, but didn't realize I had overdone it to that extreme. So...my doctor said it will be about a month before I am fully recovered. I was extremely proud that I was able to cook today, and it was absolutely delicious 😀.
