Today is my 9-month #ketoversary
. 9 months ago today I made a decision to change my life. I took the time to research this way of life, reached out to some friends for advice, and had a conversation with my doctor. If you had told me 9 months ago that today I would be here, I never, ever would have believed you.
You are stronger than you know. You can do it. Look into research, do some digging online, look up recipes, prepare yourself, and take control of your own journey.

Keto Breakfast Muffins! (No Bread Allowed🚫)
1️⃣Preheat oven to 350’F. Line a muffins pan with silicone liners or unbleached muffin liners.
2️⃣In a skillet, melt fat of choice over medium heat. Saute spinach for about a minute until it begins to wilt. Turn off heat. Add chopped bacon pieces and fresh herbs. Mix to combine.
3️⃣In a large bowl, whisk together 10 eggs, salt, pepper, and garlic powder. Set aside.
4️⃣Spoon spinach/bacon mixture into your prepared muffin cups. Pour the whisked eggs evenly over the mixture.
5️⃣Bake for 20 minutes, or until toothpick inserted into the center comes out clean.

Ended a fasted workout this AM with a breakfast repeat. These 3 ingredient lowcarb protein pancakes are the truth guys. •2 eggs •1 scoop of preferred protein •1 tsp baking powder
I subbed the 2 eggs out for 6 tablespoons of Kirkland’s egg whites, I prefer to start eating the majority of my fat grams for my second meal of the day. For the protein powder I used NutraOne vanilla flavor just because I had it on hand and it’s macros are pretty decent. Add in the baking powder and water to consistency; scooped at 1/3 cup for each pancake and let it do its thing in the pan.
Paired it with 6 strips of Kirkland’s bacon, 8 oz of almond milk and the daily supplements for the perfect breakfast not short of protein and low in net carbs.

It happened.... Five months into Keto, and I lost a battle with carbs. One small cheat led to another and another and another...😞
I sincerely hate saying this, and am super embarrassed, but I gained 10 of my 20 lb loss back (in a freakin week!). 👎🏻
I’m BACK to Keto this morning, and already feel better in my mind, body, and spirit!! Thank you Jesus 🙏🏻

Yay! I completed my first fast since being on Keto. I’ve fasted before but had #bulletproof
coffee, so this is my first fast without anything other than water and black coffee this morning. I’ll have a bulletproof now and won’t have lunch until about 1. Once you are #fatadapted

paleo bread becauce it's only 1 gram of carbs! Honesty I couldn't eat it alone because the texture was a bit off but when I ate it with the eggs and bacon it was better! I'm going to try french toast with this bread and I'm thinking it would be perfect for bread pudding (my mom loves bread pudding so that will be something cool to try for her)

Had to take 3 weeks off from a running due to an injury. I survived and eased back into running last week. All is good and today is officially marathon training start day. Day 1: humidity 1 me 0

Growing up I was the fit girl. The athlete. These days I'm more relaxed with things.
It makes me sad to see all these scantily clad "fitness" models or diet experts on social media. You know the posts. They feature toned women wearing bikini's or short shorts.
I would rationalize not looking like a fitness model. Looking good is their job, not mine. I could look like that if I had a nutrition coach and a celebrity trainer and all the time in the world to workout.
Then I realized, I could do this. I could workout for hours and count calories and macros with precision. I could get closer and closer to my best physical self. I could, but I actually don't want to. I want to eat healthy, nutrient dense foods because they make me feel good, but I also want to be able to enjoy a cocktail with friends. I want to train because it's an energy enhancer, stress reliever, anxiety reducer and confidence booster. It's my time to focus on me or focus on nothing at all. It allows me to challenge myself and to grow physically and mentally. I remind myself that even when I wore a size 2 jeans, I never had 6 pack abs and that's ok. We are not all built or have the genetics for this.
And I realized I don't need the validation of strangers on Instagram to feel okay about any of this.
I've come to really believe that fitness, health and happiness comes in many shapes and sizes and should be measured by something other than weight or waist size. It's not a competition. We can all win and we don't need a certain number of "likes" to do it.

This was not a good week/weekend. Tuesday night I had tacos with tortillas, I can’t remember what else I had that week but I know it wasn’t good, and then this past weekend I was in a wedding so Friday, Saturday, and Sunday were filled with carbs. I had tons of alcohol, bread, and sugar. But you know what? Life happens. The most important thing is that you get back on that horse and start again. It’s unrealistic to think I’ll never eat carbs again in my life. But it’s not unrealistic to think I’ll never let carbs rule my life and my meals again. Sure, I may have days where I go overboard, but I think it’s more important than 85-90% of the time, I’m fully committed to this lifestyle and way of eating. I still haven’t had french fries in over two months, and they were my addiction 😂
I weighed in this morning and was back up to 279, and to be “on track” I should have been around 273. But that’s okay, I’m still working on it, and I’m happy that I’m nowhere near my starting place of 312. Happy Monday peeps! I hope you have an awesome week!
