I was starving today.... NOT because I didn’t eat enough food cause let me tell you I had 6 meals but because that’s what weightlifting 🏋🏻♀️ does to you. .
I was excited to come home and devour these mini muffins for dinner. I loved them because they are the PERFECT portion and great for re-heating and enjoying with a salad or fresh veggies. Also, they had the prefect amount of spice in them. This momma loves 😍 some spicy 🌶 food. .
They were made with ground turkey, quinoa, red pepper, onion, enchilada sauce, spices and topped with some cheese! These are packed with protein, low carb and are so flavorful. 🤤👌🏼 .

Great bakers listen to dough with their hands. Over time, they learn the nuances and adjust how they handle and shape each loaf based on dough strength, hydration and other factors. At our bakery, we use machines to help lift heavy mixing bowls, divide pieces of dough and load bread into ovens to ease physical strain on a crew. Hot days. Thunderheads and a storm of sunflowers. Kale for dinner again. (Not complaining)...brought in an armload of tomatoes today, Tie dye, oxheart, Rutgers, Gooseberry. My refrigerator is stuffed with zucchini and cucumbers. I haven't started canning yet, but I'm gearing up. Just now though, a sit down. A sip of water while watching bees buzz and doggies stretch in shady places.
