‘s recipe for sweet potato, lentil and spinach curry for dinner tonight. Only I didn’t have any spinach or greens so subbed in some of the green beans we bought from the market. This is actually v similar to one of Claudia’s favourite foods back from when she was a baby (though without the curry spices) but since those days she’s become anti-orange food so I was pretty pleased she ate some of this. It was really yummy & comforting, just what I need after a few weeks of not much sleep 💤. (Moving house has not helped with the child that is as bad at sleeping as she used to be at eating.) •PINEAPPLE UPSIDE DOWN CAKE 🍍• And sometimes you just need a taste of the tropics to make it through the day 🏝. I love this cake, it’s packed full of fruit, there’s not much in the way of refined sugar and it tastes like a cake version of a pina colada 🍹. It’s almost like being in the Caribbean...
Although I haven’t got much of a sweet tooth, the rest of my family most definitely do! This was certainly up their street. And it’s so little effort (and yes I got to use my caste iron pan again 🙌). It’s gorgeous with a dollop of coconut yoghurt 🥥 or just eat it on its own, it’s delicious either way! I sometimes freeze pineapple if I’ve cut a whole one and there’s some left over. This is perfect to use up some of that stash!

2 medium eggs - beaten
140g pitted dates
8 tablespoons boiling water
160g spelt flour
Pinch of salt
1 teaspoon baking powder
1/2 teaspoon bicarbonate of soda
2 cups of fresh/frozen pineapple - roughly chopped
2 tablespoons coconut sugar or brown sugar (optional)
75 ml melted coconut oil
2 tablespoons desiccated coconut
1. Preheat the oven to 180 degrees C. Heat up a caste iron skillet or oven proof pan. Add 2 tablespoons of the coconut oil and the sugar if you’re using - allow to bubble and then add the pineapple and allow to caramelise.
2. While this is going on, blitz the dates and boiling water in a blender till smooth, then mix the dry ingredients in one bowl and the wet ingredients in another and then incorporate the two.
3. Place the mix carefully over the pineapples and put into the oven.
4. Cook for 25 minutes or until the skewer comes out clean. Allow to cool in the pan for 10 minutes or so and then invert on to a plate. Sprinkle with coconut flakes. Eat warm or cool, it’s great either way!

We arrived yesterday after a long 10 hour flight.... kids were surprisingly good! 😇😇 Maisie in fact watched back to back movies and munched her way through all the snacks & was totally easy she barely even opened her bag which was packed with games, colouring etc!!...Alfie on the other hand 🤔..insisted on playing ALL the games ...he had no interest in sleeping or watching films or playing on his iPad?!?! 🤷🏻♀️🙄😩😬😂...#exhausting
!! But he was pretty good and we got here in one piece of not slightly frazzled!! 👍🏼..and I now feel like an expert on how to entertain a nearly 5 year old on a long haul flight!!! 😂

•ANOTHER DAY, ANOTHER SMOOTHIE BOWL• So as predicted yesterday was so chaotic, and I managed to get lunch at 5.30pm (sitting at a desk shovelling food in - definitely no time for mindful eating 😬). That’s what you get when you’re the medical registrar 👩⚕️. But I had some nuts that I snacked on along the way, and actually it wasn’t that bad as yesterday’s smoothie bowl kept me going. And today is likely to be no better as I probably have 40 new patients to see 🤔. So I’ve done it again - this time a green smoothie bowl topped with homemade cacao granola. This is so delicious - there’s frozen kale, banana, avocado, flaxseed, almonds and spirulina in the smoothie 💚.
Right, I’m off for a very long ward round...👩⚕️
Another snacky plate for the win 🙌
Tomato couscous, hummus, cucumber and yellow pepper (F is really into peppers at the mo so every time we go to the shops we have to get one in every colour 🌈)
Couscous was cherry tomatoes cooked in a pan with olive oil until they started to go squishy (could have done with longer really but it was speed over flavour this eve 😬), then added a couple of chopped spring onions, garlic and fresh oregano and cooked for a few mins. Added wholemeal couscous and covered with water (and some veg stock) - brought to boil and cooked for a couple of mins- then popped a lid on and turned the heat off. I stirred through pomegranate seeds at the end. J loved this - she had thirds. F declared he didn’t like it, but then managed to pretty much finish it once he’d got over the hurdle of trying it 🧐

Bit of a hotchpotch fridge raid for our grown ups supper (we went to the pub with friends for lunch where Rupert ate sausages, baked beans and chips, and also “shared” aka “ate most of” Mummy’s rhubarb crumble for pudding - so he just had sandwiches for his tea tonight). We had half a jar of jalfrezi sauce left from my husband’s curry making session a few nights ago, so in a frying pan, I cooked off some dry spices in coconut oil then added salmon fillets (skin side down to crisp). Then flipped them back over, added the sauce, a little water to thin it down and some spinach. I then let it simmer until the salmon was cooked through and served it with the left over saag aloo (double spinach for us 😂) and some toasted pitta bread that needed eating up. Totally random but perfectly good to eat, especially with a blob of yogurt and some chopped fresh coriander ❤️ #familyfoodtribe #fridgeraid #salmoncurry #easydinner
Growing up, we never had ‘spaghetti bolognese’* for dinner, we just had pasta and meat sauce, simply put, simply made, and very delicious!
I was fortunate enough that my mum (aka Nonna CoventrEATS) felt in the mood to cook up a storm yesterday, and the result is this: pasta and meat sauce. Just this.
For a ‘real’, authentic meat sauce, you need: plenty of vegetables in the soffrito, a good glug of red wine over your meat once browned, and a solid 4 hours or more gentle puttering on the stove. If you’d like the full recipe, just let me know, and I’ll write it up properly!
*did you know, spaghetti is made for light and spicy sauces, not chunky meaty ones!

I’ve had a simple raspberry black bean chocolate brownie recipe on my online 28 day plan, which families really really love. I’ve now started to add chopped nuts, because @hungrylittlebears
added them and it’s such a lovely way to give the brownies a little more crunch. But for this massive tray it’s berries only. How lovely!
I’m feeling frazzled at the moment with the girls end of school year approaching in a couple of days. Saying good bye to old teachers, hi to new ones can be emotional. Plus the girls are really tired so emotions fly high! That’s why I thought these delicious brownies will be lovely o have for all of us. A bit of chocolate always helps to feel less on edge! Another non stop day here but managed to take a quick photo of our homemade granola this morning... Rupert and I made it together first thing and did some colouring whilst it baked. The genius thing about having berries in the freezer is that they immediately cool everything down so cold yoghurt and frozen blueberries meant we could tuck into our warm freshly baked granola within minutes of it coming out of the oven! ⭐️batch cooking 👨🍳 Returning home to almost completely empty cupboards, fridge and freezer makes me a bit anxious, so I’ve prioritised some batch cooking to restock.
The kids barely touched a vegetable whilst we were away so I’m offering them left right and centre, and am packing them into meals where I can!
Grated some mushrooms and courgettes (peeled obvs so they don’t spot them) into this mammoth pot of bolognese, along with some finely chopped carrots, and have taken @hungrylittlebears
top tip and added a pouch of @merchantgourmet
puy lentils to the organic beef mix too!
Going to try it with some crispy potato skins tomorrow- wish me luck 🤞

P A N T R Y I have dreams of one day having a room, lined with shelves heaving with jars of pickled vegetables and fruit, a bit like you see in old American films. But I'm pretty delighted with my big cupboard, where I now have everything in one place. When I start cooking I keep the doors open and can grab everything that I need as I go. Whatever shape your pantry or food cupboard/shelf is in, here are my top tips for making it useful...
1. Keep ingredients from the same country together. I keep all my Asian spices and sauces in one part of a shelf, my Middle Eastern stuff next to them as there is a bit of cross over, and my European bits together. That way you won't be rummaging when you cook.
2. When you use the last of something, put a note in your phone. I have a shopping list in my notes so I don't forget it when I'm out.
3. Get to Ikea and buy the plastic bag clips to keep bags from emptying everywhere. If you've got space, buy a load of the glass jars that they sell and decant things into them. Keep old jam jars to fill with small amounts of seeds and spices.
4. Once a month have a bit of a clear out. Use odds and ends of seeds and nuts to make granola (recipe on my site). Make a mish mash pasta bake with all the annoying almost-empty bags of pasta and noodles. Ditch any spices that are more than a year old. Then make a list of what you need to use up (use this when you're meal planning) and what you need to buy.
5. Keep the things in your pantry that will mean you can bang out an easy dinner when you don't have time to go to the shops - for my list of pantry essentials and the storecupboard meals I use them in, comment below.

BBQ brights. Barbecuing everything at the moment. Salmon was seasoned with lemon juice, fenugreek, turmeric and chilli 🌶 🍋 🐟. We identified the ‘curry gate’ smell was caused by the fenugreek so now only use this on the bbq, maxing our right now! Fennel, asparagus and red pepper. Bag of rice in the microwave, with some fresh chives from the garden that mini me is yet to pick off with her new found enthusiasm for my herb pots!

Tuesday: A super easy 🍛 Lamb curry 🍛made even easier because I grabbed this one from the freezer #heresoneimadeearlier
🙌🏻 and just pimped up a bit with some fresh coriander and flaked toasted almonds 👌🏼..BUT if you would like to make this at home from scratch then here’s what you need to do:
• Start by dry frying some cumin seeds (1 tsp) then added a tsp each of the following: ground cumin, ground coriander, turmeric, garam masala, mild chilli powder, curry powder... ~
• Add a little oil then add your diced onion, 2 crushed garlic cloves, grated ginger (about 1 inch) and fry to soften the onion...
• Next add 1 tbsp tomato purée, 1 tin of chopped tomatoes and around 1 can of water...
• Then add some diced leftover cooked lamb, tin of chickpeas, 1/2 can of coconut milk and simmer for 15 mins...finally add some green beans and cook until tender... ~
• Then serve with some wholegrain rice and scatter with some fresh coriander and some flakes toasted almonds! DONE! 🌟 if you’re using raw meat then simply coat with a little flour and then brown after you’ve browned the onion...then you can add the liquids as per the steps above! Easy
I treated the kids to tea at David Lloyd after their last swimming lesson before the hols - they went for all the beige! Alf had macaroni cheese with baked beans and Maisie went for chicken goujons, chips and beans! 🙈😂😂....and totally cleaned their plates needless to say!

! We cobbled these together after nursery. Filling is brown rice noodles (we didn’t have vermicelli but these flat ones tasted fine...), grated carrot, cucumber and tomatoes with a ginger, lime and soy dressing, avocado and cashew nuts. .
Two year old was on cashew duty, three year old was on filling duty and plate arrangement (I rolled so actually there is no excuse for that 🤣🤣).
We had them with a peanut dipping sauce (peanut butter, ginger, lime, garlic, soy sauce, sesame oil and water).
When it came to eating things got messy pretty quickly. But F tucked into two of these, J deconstructed and face planted into the peanut dipping sauce (all normal rules of dipping etiquette out the window 😜). But overall a success- and fun to make 👊💪

The mango wasn’t ripe enough to use (which I should have predicted) but even so, this was a tasty way to use up some of the roast chicken leftover from the weekend ➖➖ Crosta and Mollica wraps (which have far fewer ingredients than the standard supermarket offering), lettuce, chicken, cucumber, spring onion, chilli, mint leaves, sweet potatoes (roasted with maple syrup, olive oil and star anise), mayo and a lime dressing 👍🏼 ➖➖ this kind of dinner with lots of components always works well with the boys as they have the bits they like plus any leftovers from the fridge to supplement their selection and turn it into something more closely resembling a meal 😆 ➖➖ today’s additions included sweetcorn, edamame, melon, cashews and houmous and I also cooked some rice for them .
