in honor of cross country starting today and half of my high school career being over, i decided to turn my spam account into a food account because who doesn’t loooove food amiright? •
today for my pre-run lunch I went a little on the light side with this DELISH chef salad & sides! in the salad we have:
-spring greens mix
-sugar snap peas (diced)
-avacado (duh) -mexican blend cheese
-carrots and -caesar dressing
tbh, i hate salads but this one was pretty good and really hit the spot. you can add pretty much any veggie to this so whatever you like go ahead and throw it in there!
now of course sides are just as important! today i had @harvestsnaps
snapea crisps which are such a great substitute for potato chips because they have 50% less fat and they’re high in fiber! (plus they’re sooo addicting) to top it all off i had a banana and chia seeds! bananas are super good for athletes because they have high levels of potassium so eat up kids! pairing a banana with chia seeds just gives it an extra crunch PLUS chia seeds are hecka good for you with high levels of fiber and packed with plant based protein! •

In my new Mindfully Nourished nutrition program I've been going super veggie heavy in the evenings, and this TOTALLY hit the spot.
1 spaghetti squash (small for 1 person or large if you're splitting it with someone)
1/2 cup of browned ground beef or turkey, per half squash
1/2 cup pico de gallo, per half squash
1/4 avocado, per half squash
1 TBSP greek yogurt, per half squash
chopped cilantro to taste
1. Cook* spaghetti squash and cut in half. Scoop out seeds and discard.
2. Fluff spaghetti with fork but do not remove from squash (this will be your boat to eat in
3.) Fill squash with toppings.
*my favorite way to cook spaghetti squash is in the microwave. Pierce the squash MANY times with a fork. Place in microwave safe dish with 1/4 cup water. Cook for 4-6 minute (depending on how big the squash is). Flip, cook 4-6 more minutes. Remove from microwave, cut down center (CAREFUL it's VERY hot!) scoop out seeds and discard. You can also cook the spaghetti squash in the #instapot
