Tilapia tacos.... I have struggled with my diet and weight for years. Due to having issue with my stomach I can’t process food the way most do but the best diet for me has been paleo. I did it for two years straight and I was health. I fell off and have not been happy plus gained some weight. I decide to get back one it last week and already lost 3 lbs. It’s a bit hard for me bc it consists on eating meat,veggies, fruits and I can’t eat red meat or pork. Anyways, I’m trying to mostly do it with fish. How said eating non-process food and healthy was not yummy. Super quick and simple dinner tonight! Potato wedges with vegan nacho cheese dipping sauce and a kale summer salad with homemade poppyseed dressing, blueberries, pecans, and pumpkin seeds!

meal: pork shawarma on a bed of bulgur/tabbouleh and accompanied by pickled onions and pickled red cabbage.
This one was close ... but! The bulgur/tabbouleh was great, as were the pickled veg. But the shawarma itself? Wrong on sooooo many levels.
First. Pork. Really, @hellofreshca
? Pork? This is a quintessential Middle Eastern dish. Neither Muslims nor Jews eat pork, so that's just plain wrong.
And then, well, let's see:
a) the meat should have been sliced thin, not chunky strips like for fajitas
b) the spices! If you've eaten a shawarma, you know the meat is intensely flavoured. Not spicy as in chili-hot, but loads of flavour. This just didn't get there.
All in all, a mixed bag. I had high hopes for this one, too bad!

cardio day 🏃🏻♀️ I always do incline walking on the treadmill. max incline and usually set my sorry to 3.5-3.7 throughout it. it really get my heart rate up without the pressuring of running hurting my knees!
2nd day in a row and I feel good. once I get a handle on my snacking then I'll finally feel like me again. I believe in balance, I hate diets and diet culture. BUT I want to be the healthiest version of myself, I want to enjoy the foods I love while keeping a positive and healthy mind/body. all about balance, my friends ⚖️💪🏻💛

Avocado Caprese Salad

SERVES: MAKES 1 SALAD
2 cups fresh arugula
2-3 campari or cocktail style tomatoes, sliced
½ avocado, pitted and sliced
3 slices fresh mozzarella cheese
fresh basil leaves
1 tablespoon extra virgin olive oil (I prefer the fruitiest, lightest flavored)
1½ teaspoons balsamic vinegar
generous pinch of sugar or dollop of honey
kosher salt and freshly ground black pepper
Assemble the arugula, tomato, avocado slices and mozzarella in a serving bowl. Top with torn or slivered basil leaves. Whisk the extra virgin olive oil in a small bowl with the balsamic vinegar, sugar or honey and season with kosher salt and freshly ground black pepper to taste and pour over the salad. Toss to coat and serve.
Craving lentils today! I had to make some even in this hot weather.😒 Sautéed onion, carrots, tomatoes. Also added in 3 cups water + 3 cups chicken broth, seasoned with salt, pep, garlic powder, and oregano, threw in lentils and called it a day! I just added leftover broccoli at the end to my bowl and topped it off with sliced avocado! Hope your having a great Tuesday.

Missing our Ecuadorian fresh market for produce on this snowy day in Argentina 😩 We went on Facebook Live tonight to chat about how, since then, the freezer has become our best friend. When in doubt, buy frozen fruits and veggies (frozen at peak ripeness and often more nutritious than what you find in the produce aisle) and frozen fish (which supermarkets thaw out anyways to put on display.) ⚡️Pro Tip: Freeze items you tend to binge on (like bread and shredded cheese) so it is less tempting to overindulge!

Spicy Pumpkin Seeds. Tasty, nutritious, quick & easy, make in bulk.
🎃 Organic pumpkin seeds, sea salt, sriracha, cumin, cayenne, pumpkin seed oil
🔥 Toss ingredients to taste in a bowl, spread on a oiled baking pan.
👨🍳 Bake at 260° for 30-35min. Stir occasionally. Cool to room temperature, store in small airtight containers.

Day 1 of this 30 day challenge complete! Here are my two favorite meals of the day. Both were topped with tofu and had rice/beans and salsa in the mix. Y U M!

granola, plants + dessert but every so often I am in the mood for something different.
Israeli-Style Satay Chicken + Pita:
- 1 1/2 tsp kosher salt
- 1/4 tsp black pepper,
- 3 tsp sweet paprika,
- 3 tsp garlic powder
- 3 tsp onion powder
- 1/2 - 1 tsp cumin powder,
- 6 single boneless skinless chicken breasts
1. cut chicken into thin strips
2. In a bowl combine all the ingredients, mix well
3. Add the chicken strips to spices, mix well. Let the chicken sit for 30 min at room temp.
4. Grill on a George Forman or bbq for 4-5 min on each side.
5. Put the chicken, some lettuce, tomatoes, carrots + hummus into a pita & enjoy. Recipe adapted from @thesilverplatter

THESE. I mentioned them in my Costco haul story last week, but I had noooo idea how freaking good they’d be. They’re candied so they’re sweet, but they have just enough of a kick to make them just 👌🏻 We’ve been chopping them up and putting them on salads with fruit and feta and champagne pear vinaigrette and oh my gosh.
