. Loading up on the crucifers .. I have the cruciferous super stars Brussels sprouts and broccoli with some avocado and asparagus and a couple of 🥓for added interest. To prepare the 🥦 and Brussels sprouts I diced them thinner and did a quick sauté for 5 mins in avocado oil. Overcooking these vegetables destroys their nutrient composition. The goal should be to consume at least 3-4 cups of these vegetables in addition to other veggies everyday. The nutrient value of these vegetables cannot be overstated. I have been reading numerous studies looking at their epigenetic value and it’s truly impressive. Some studies have shown that consuming broccoli interacts with GSTM1 genotype to result in complex changes to signalling pathways associated with inflammation and carcinogenesis especially in the prostate. These changes seem to be secondary to glucosinolates/ . There is ample research showing that cruciferous vegetables are an important source of nutrients and have a protective role against certain malignancies. Cruciferous vegetables such as kale, cabbage, Brussels sprouts, and broccoli sprouts contain chemical components, such as sulforaphane (SFN) and indole-3-carbinol (I3C), which are regulators of microRNAs (miRNAs), inhibitors of histone deacetylases (HDACs) and DNA methyltransferases (DNMTs). The mis-regulation and overexpression of these genes are often responsible for uncontrolled cellular proliferation and viability of various cancer cells.Eating cruciferous vegetables produces measurable isothiocyanates in breast tissue and observational studies have shown it’s protective value in certain types of breast cancers .
