Coco-nuts-for 🥥! Recently I became obsessed with these coconut chips I found at Whole Foods! However they’re expensive so I decided to make my own. They’re perfect for a delicious savory and sweet snack that’s also good for ya! _ I just took a peeler and shredded the inside meat of a coconut after I cracked it open with a hammer. Then I seasoned with just a little bit of olive oil, sea salt, and a tiny bit of stevia for a salty/sweet flavor. Popped it in the oven for 10 minutes, cooled it for a few and they were ready to go! Pan fried pesto cod Pesto 1/3 cup hemp seeds 1 cup fresh basil 1-2 cups fresh spinach 1/4 cup olive oil 1-2 garlic cloves Juice of 1/2 a lemon Salt and pepper to taste 1/3 cup of pepitas . Pulse all in food processor until incorporated. Green juice! I don’t have a juicer so I buy it from @wholefoods and split a bottle over two days since theirs 2 servings per bottle. This juice has cucumber, kale, spinach, dandelion, lemon, parsley and celery. I’ll admit it’s a little rough just because I taste the cucumber a lot and it’s kinda over powering to me but my body feels way better after having it. It’s 5 minutes of my day and the benefits are worth getting through the taste. 🔥Salmon and Asparagus with Dill & Caper Olive Oil Hollandaise.⠀ THIS MEAL is by far my favourite EASY go-to meal. And the hollandaise is by far the easiest you'll ever make. I PROMISE. ⠀ .⠀ #Salmon ⠀ - I like to get a big salmon, cut into servings, and make lots of left overs. Marinade in a ziplock with #EVOO & lemon juice, s&p, and dried oregano. ⠀ - Take out of fridge at least 30 min before so that it's at room temp. Broil for 8-10 minutes, let rest for a few minutes on the stove top while you prep the rest.⠀ .⠀ #Asparagus ⠀ - Add #EVOO to hot pan. Add in asparagus with some balsamic vinegar and montreal steak spice. ⠀ - Toss for about 5-8 minutes until cooked but still firm. ⠀ - Take off heat and set aside.⠀ .⠀ #Hollandaise ⠀ - In a METAL bowl, add 4 egg yolks (save your whites for a breakfast omelette!), 3tbsp water, 2tbsp lemon juice, 1tbsp capers, 1tbsp fresh chopped dill, s&p.⠀ - Put the metal bowl on a burner set to medium-low heat and start whisking. First it'll start to foam, then it'll start to thicken. Once you notice it thickening, drizzle a little bit of olive oil in, up to 3tbsp. Once desired thickness, set aside.⠀ .⠀ Then assemble! ¡Tu partido favorito del MUNDIAL y estos mini CHURROS serán la combinación GANADORA! ⚽️🏆 INGREDIENTES: - 1 2/3 tazas de agua - 2 1/4 tazas de harina - 1 pizca de sal - 1 cucharada de levadura (15 g) - 3 huevos - 2 tazas de aceite - 1/2 taza de azúcar - 2 cucharadas de canela en polvo Para acompañar: - 1/4 de taza de crema de avellanas - 1/4 de taza de leche condensada - 1/4 de taza de cajeta PREPARACIÓN: 1. Calienta el agua en una ollita mediana a fuego medio. 2. Agrega la harina, la sal y la levadura. Mezcla perfectamente sin dejar de mover hasta que se despegue de las paredes. Pasa la masa a otro recipiente y enfría un poco. 3. Agrega el huevo y mezcla perfectamente. Deja reposar y mete la masa a una manga con duya rizada. 4. Calienta el aceite en un sartén profundo a fuego medio. Deja caer cuidadosamente la masa en el aceite y corta con unas tijeras del tamaño deseado. Dora perfectamente por 5 minutos, retira y escurre en papel absorbente. 5. Mezcla el azúcar con la canela. Revuelca las palomitas de churro para que se adhiera el azúcar. 6. Sirve en conitos de papel encerado. This is literally one of the best pasta salads I’ve ever made! It’s so delicious and feels very light at the same time. It’s a very easy make for a summer lunch with the fam or potluck with friends! P.s. this was actually the first time I tried tortellini pasta and it was SO good! I love it! Ingredients & recipe are below! ————————————— Ingredients: • 1lb tortellini pasta • 1 red onion, thinly sliced • 1 pint cherry tomatoes, halved • 1 cucumber, diced • 4oz feta cheese, crumbled For dressing: • 1/3 cup Apple cider vinegar • 2 tsp fresh lemon juice • 1 tsp sugar • 1 tsp dried oregano • 1/2 tsp red pepper flakes • 1/2 cup olive oil • Salt and black pepper, to taste _______________________________ Recipe: 1. Bring a pot of salt water to boil and cook the pasta according to package instructions 2. When the pasta is done cooking, toss it with the onions, tomatoes, cucumbers, and feta cheese. 3. In a separate bowl, whisk together the apple cider vinegar, lemon juice, sugar, oregano, and red pepper flakes. Slowly pour the olive oil and whisk to combine. Season with salt and black pepper. 4. Pour the dressing over the tortellini salad and toss to combine. Serve warm or at room temperature!

I wrapped the salad in collard greens, inspired by all of the awesome burrito recipes that @TheRawBoy creates with collards. This is an easy way to add veggies to a recipe, and you can hardly taste the collards when you’re eating the wrap. Collards are also pretty mild in flavor, which may be why they serve as an ideal veggie wrap. It normally takes me 5 min to make an 8 pieces sushi roll, if you have all the ingredients on hand . And the best thing is that my homemade sushi contains NO sugar, salt, mayo, processed ingredients (like crab sticks), anything fried, and … bacteria. Sushi has a healthy reputation, but it can carry even a dangerous parasite. . I have several favorite recipes but my Vegan Sushi is suitable for all diets. Try it and from now on the only sushi you touch should be homemade😋. . 🥑INGREDIENTS🥕 . . 📍1 cup sushi rice cooked🍚, add a bit of beetroot juice to color it. 📍3 Tbsp rice vinegar. 📍4 sheets nori seaweed. 📍1/2 cup sesame seeds. 📍2 med. cucumber (about 5” long)🥒. 📍1/2 cup red cabbage, shredded 📍1 carrot 🥕. 📍1/2 avocado🥑, peeled and sliced. 📍4 steamed asparagus sticks. 📍wasabi and light soy sauce. . Optional: 4 Tbsp of any vegan cream cheese. 👨‍🍳INSTRUCTIONS👩‍🍳. . Cook rice according to package directions. Set rice aside until cool. . Cut each cucumber in half, length-wise. Cut each half into ½” wedges. If you use a large cucumber, cut it in half cross-wise first, to create two pieces. Cut carrot and avocado same way. . Assemble sushi: On sushi mat, arrange 1 nori sheet. Spread 1/4-inch-thick layer of rice over sheet, leaving a 2-inch border at edge farthest from you. : Horizontally arrange 1 spear asparagus, cucumber, carrot, asparagus, cabbage and avocado. Grab edge of mat closest to you and roll towards top; moisten top border with water and press to seal. Let rest in the fridge for 2 min. before removing mat. With a sharp knife, slice roll into rounds. Repeat with remaining nori and fillings. Serve with ginger, wasabi and light soy sauce. Bon Appétit😋👌👍

Trick out your instant noodles 🍜 Recipe: 1. Sauté vegetables of your choice- I used zucchini, onion, and bell pepper. You can really use whatever you want or any leftovers you have in your fridge 2. Once vegetables are almost done to your liking, add garlic and some extra seasoning. This could be soy sauce, chili powder, an extra packet of the seasoning that came with the noodles, etc. The point is to give the vegetables some flavor, because the normal seasoning packet won’t be enough for both the noodles and veggies. 3. Cook noodles according to package directions. Either leave the water in if you like soupy noodles, or drain it if you like it more dry (like I did here). I used Maggie noodles for this btw 4. Cook an egg however you want. Scrambled, fried, hardboiled, etc all work for this! 5. Add spice if you want - I always add both red chili flakes and sriracha to literally everything I eat!
