OMG basil is back in season! If you need me I’ll just be over here eating pesto pasta on repeat. Pesto is hard to screw because it’s made from such yummy ingredients. Just combine, taste, adjust, eat. I’m going for health too, though, so this one is a big bunch of fresh basil, one leaf of kale, a big handful of toasted walnuts and pecans, five cloves of garlic, a big handful of nutritional yeast, the rind and juice of one lemon (make sure it’s organic if using the rind!), a splash of homemade cashew-pecan milk, a tiny drizzle of olive oil, and a scant teaspoon of salt. A lil late with my normal Tuesday post since I didn’t get to the store until after work today, but here we go:
This week Justin starts his part time job and they have him on the schedule quite a bit to get him trained, so I had to prep not only lunches for both of us, but also a few dinners for him! SO we’ve got Broccoli, Cauliflower rice and Chicken casserole for lunches... um yum... with Brussel sprouts making a second appearance this month! Along with chicken and mixed veggies, a few already portioned out and some extras just in case, for a few dinners! Chickpea salad - 1 can of rinsed chickpeas, 1 avocado, 1/2tsp cumin, 1/4 tsp coriander, 1/2 tsp sea dalt, sprinkle of curry powder, arugula, tomato, your favorite vegan bread. Combine chickpeas, avocado, cumin, coriander, sea salt and smash with fork. Put arugula on bread top with chickpea mixture and sprinkle with curry powder. Add tomato and enjoy

Cold noodle salad inspired by the one posted on @basically.
I like complicated meals. Cooking in the kitchen is my form of meditation. Tonight, I wanted something easy as well as quick and this noodle salad did the job. The noodle is made with spelt flour. I got it from @tjmaxx.
I am always fascinated with trying different types of flour. I have recently started toasting my raw broccoli. I just love that bit of char.
Some cashew nuts, slices of rotisserie chicken and strips of pepper made this perfect. I discovered I did not have lemon at home to make the dressing so I added in @cindyskitchen
creamy miso dressing I had at home.
This took less than 30 minutes to put together. I'm definitely keeping this in rotation for hot summer nights.

Nicoise Salad is the perfect summer meal for when it’s too darn hot ☀️ to turn on the oven!
It’s Easy Peasy: Start off with a bed of greens and top it off with
Halved cherry tomatoes 🍅
Chopped cucumbers 🥒
Skipjack tuna 🎣 or Cubed Avocado 🥑 for veggie option
Boiled potatoes 🥔
Hardboiled Eggs 🥚
Blanched Green Beans
(These last three ingredients can all be boiled in the same pot of boiling h20: First add the potato quarters, 2 minutes later, add the eggs and then 5 minutes later, add in the green beans for the last 3 minutes of boiling to blanch. Drain all of it into one colander). Toss the potatoes with some dressing while they’re warm so they’re infused with flavour. Put them all on top of the greens too (peel the eggs and halve them first, of course!)
Add some capers, if like some extra briny-ness, and drizzle it all with a vinaigrette: 3/4 cup olive oil, 1/3 cup lemon juice 🍋, 1 tsp mustard, adding 3Tbs of chopped shallot and some fresh thyme or tarragon or basil- or all 3 herbs 🌿 to the dressing if you have them. Bon Appetite! 🇫🇷 By the way, Do you know that white tuna is albacore and has around 3xs the mercury than light tuna, which is usually skipjack? This is due to Albacore’s larger size. Rainforest brand is pole and line caught and in Bpa free cans. This B.C. Company received top marks from Greenpeace, Canada for sustainability.

Working on building my ab definition back up! Yes that requires hard work in the gym, but the most important factor in getting your abs to pop is NUTRITION. You can’t out-train a bad diet! I’m blessed to have found such a simple nutritional system that fuels my body for my workouts and hours of walking dogs, and gives me enough energy to go to the gym AGAIN (like I did today 😅). No hours spent grocery shopping and meal prepping to eat healthy. Just a quick five minute throwing together of my shake in a blender and BAM 💥 24g of whey protein, 23 vitamins & minerals, 240 calories, no artificial CRAP, soy free- the list goes on! I’m really loving cauliflower rice lately ❤️ I just buy a bag of the pre riced cauliflower, season it with my favorites (today I used s&p, garlic powder, onion powder, cumin, crushed red pepper and cayenne pepper🌶) then sauté in a skillet over medium heat in 1 tbsp oil for several minutes till tender 👩🏼🍳 #jensbowl

Three bean salad!!! Any beans, drained and rinsed (I used white beans, black beans, and chic peas). Any veggies, chopped. I used cucumber, green pepper, and roasted red peppers. Dressing: 4 Tbsp red wine vinegar, 4 tsp extra virgin olive oil, salt and pepper.

These have ground pork, shredded cabbage & carrots, sugar snap peas, edamame, scrambled egg, cauliflower rice, onion, garlic, ginger, soy sauce & sesame oil. I mixed the cauli rice in, but still served it over brown rice because #tots

The younger tot (19 months old, yellow plate) had most of his main dish and strawberries and some of the “nice cream” (he loves bananas, but didn’t seem crazy about this). The older tot (3 years old, green plate) had some of his main dish, some of his apple (leftover from lunch) and 2 servings of “nice cream” and wanted more (meanwhile, he‘ll rarely eat bananas 🤷🏻♀️🙃🤷🏻♀️🙃🤷🏻♀️🙃)
